When frozen, it becomes meat-like, and when marinated, it takes on a cheesy texture.
It’s healthy, yet still satisfying.

●Fried Tofu
400g frozen firm tofu
2 tbsp soy sauce
1/2 clove garlic
Ginger (same amount as garlic)
Batter: 2 tbsp potato starch + 1 tbsp all-purpose flour

● Garlic Teriyaki Stir-Fried Tofu
Frozen firm tofu: 1 block
Potato starch: as needed
White sesame seeds and green onions: to taste
・Sauce
Soy sauce: 2 tbsp
Sake: 2 tbsp
Mirin: 2 tbsp
Sugar: 1 tbsp
Garlic: 1 clove
(Tip)
If you use fresh tofu instead of frozen, the result will have a fluffy texture similar to deep-fried tofu.
●Tofu Tempura
Silken tofu: 150g
Flour: 3 tbsp
Ingredients of your choice: shrimp, fish cake, sweet potato, pumpkin, shiitake mushrooms, shiso leaves
(Tip)
Ingredients with high water content, such as shrimp, tend to make the dish a bit soggy.
● Tofu Omelet
Silken tofu: 150g
Eggs: 2
Mentsuyu: 2 tsp
Sugar: to taste
(Tip)
If using a microwave, cook at 600W for 5–8 minutes.
● Tofu and Avocado Potage Soup
Avocado: 1
Silken tofu: 200g
Soy milk or milk: 200ml
Bouillon powder: 1 tsp
Salt: 1/2 tsp
Pepper: a pinch
Olive oil: to taste
Basil or nuts: to taste

● Tofu Marinated in Salted Rice Malt (Vegan Cheese-Style)
Tofu: 1 block
Salted rice malt: 3 tbsp

(Tip)
If you don’t have salted rice malt, you can make a similar version using miso. Add a little mirin to the miso and spread it on the tofu.
● Tofu Pancakes and Steamed Buns
Pancake mix: 200g
Silken tofu: 150g
Egg: 1
Milk: 50ml

When you first start mixing, the tofu alone may seem too dry, but keep mixing until the batter becomes smooth.
To steam, line a ramekin with parchment paper and pour in the batter. Alternatively, add 2 cm of water to a frying pan and steam over medium heat for 20 minutes.
●Tofu Pudding
Eggs: 2
Silken tofu: 200g
Sugar: 40g
Butter: 10g
・Caramel Sauce
Sugar: 40g
Water: 1 tbsp
Hot water: 1 tbsp
