INGREDIENTS:
• 1 lb. Sharp cheddar cheese, grated
• Havarti cheese, sliced, depending on thickness use 2 to 4 slices per sandwich
• Sourdough bread, I used Skarr gluten free bread or regular sour dough
• Butter
• Parmesan cheese, grated
• 1 clove Fresh garlic, minced and sit for 10 minutes before adding melted butter

Directions:
Grate the sharp cheddar and parmesan and set aside. Use a garlic press to mince 1 clove of garlic. Let it rest 10 to 15 minutes before adding melted butter to activate the allicin for the health benefits.

Place one or two slices of Havarti cheese on 1 slice of sourdough bread, one handful of grated cheddar, then 1 or 2 slices of Harvarti on top of that. Finish with the top slice of bread.

Melt the butter and add it to the garlic and stir. This will infuse a wonderful garlic flavor into the butter.

Preheat a pan over low heat. Add 2 -3 tsp of butter to the pan. Once it melts add a sprinkle of grated parmesan cheese and place the sandwich on top.

Spread a light layer of butter on top of the sandwich and sprinkle with more parmesan cheese.

Cover with a lid and check the sandwich in about 3 to 4 minutes. The lid will help the cheese melt quicker. Once the bottom is golden brown, flip it over and brown the second side. It's better to have the temperature too low than too hot. We want that cheese to be all melty and the crust to be crispy golden brown.

When the grilled cheese is don't place it on a cutting board and brush with the garlic butter on both sides. Cut the grilled cheese in half and serve. Enjoy!
