
My Go-To Healthy Salad | The Arugula Salad Everyone Will Love
Fresh, crunchy, and full of flavor 🌿✨
This simple arugula salad is one of my favorite healthy side salads. The combination of peppery arugula, crisp cucumbers, fresh herbs, and a bright lemon olive oil dressing makes every bite so refreshing!
🥗 Ingredients:
• 60 g arugula (you can also use baby arugula)
• 2 cucumbers
• 3 green onions
• 1 medium red onion
• 1 handful of fresh dill
• 1 handful of parsley
• 3 tbsp olive oil
• Juice of 1/2 lemon
• Salt and black pepper to taste
🥒 Instructions:
Roughly chop the arugula. Slice the cucumbers into rounds. Chop the green onions, finely dice the red onion, and finely chop the dill and parsley. Add everything to a large salad bowl. Drizzle with olive oil and lemon juice, then season with salt and black pepper. Toss well until everything is evenly coated.
