🍓 Strawberry Cheesecake with Jelly
Crust:
• 250 g biscuits
• 100–120 g melted butter
Crush the biscuits into fine crumbs, mix with butter, and press firmly into the pan. Chill for 20–30 minutes.
Filling:
• 350 g cottage cheese
• 300–350 g cream cheese
• 200 ml heavy cream
• 120–140 g powdered sugar
• Vanilla
• 12 g gelatin + 60 ml water
Blend the cottage cheese until smooth, then mix with cream cheese, cream, sugar, and vanilla.
Soak gelatin for 10 minutes, gently warm until dissolved, cool slightly, and mix into the filling.
Pour into the crust and refrigerate for at least 4 hours.
Topping:
• Fresh strawberries
• 1 packet strawberry or clear jelly
Arrange dry strawberries on top. Prepare the jelly with slightly less water than instructed for a firmer texture.
Pour a thin first layer of jelly, chill for 15–20 minutes, then add the rest and refrigerate until fully set 🌷
