Hey everyone! Welcome back to Pure Delicious. I hope you're having a wonderful day.
Grab about 12 ounces or 350 grams of mushrooms and cut the larger ones in half.
Then transfer them into your baking dish. Now drizzle over about two tablespoons of olive oil
and toss well so the mushrooms are nicely coated. Today I'm sharing two simple mushroom recipes that
are perfect for an easy flavorful side dish turning basic ingredients into something really
delicious you'll want to make again and again. Stay tuned you won't want to miss them. Go ahead
and season with about half a teaspoon of kosher salt and a quarter teaspoon of freshly ground
black pepper and a quarter teaspoon of dried thyme or if you have fresh just use two to three sprigs.
You'll need two cloves of garlic. Dice one of them and add it to the baking dish.
Smash the second clove and just toss it in whole with the skin on. Toss everything together then
spread the mushrooms out into a single layer. Bake in a preheated oven at 400 degrees Fahrenheit
or 200 degrees Celsius for about 35 minutes. At the 20 minute mark take it out of the oven
give everything a quick toss then return it and bake for another 15 minutes. In a small bowl
mix about one and a half tablespoons of olive oil with two tablespoons of balsamic vinegar.
Our mushrooms are out of the oven perfectly golden and wonderfully juicy. Remove the garlic
clove then transfer the mushrooms to a bowl. Pour the sauce over them and let them sit for about two
hours giving them a toss a couple of times as they soak up all that flavor. You can serve these
flavor-packed mushrooms alongside grilled chicken or steak. Spoon them over creamy mashed potatoes
or even toss them with pasta for a quick comforting meal. They also taste amazing on toasted sourdough
or as a topping for burgers and sandwiches. However you serve them they bring so much
rich savory flavor to the table. Let's move on to the second amazing recipe.
In a small bowl stir together one tablespoon of water, one tablespoon of balsamic vinegar,
and two teaspoons of dark brown sugar then set it aside for later. Cut about 16 ounces or 450 grams
of mushrooms into chunks. Warm one tablespoon of butter and one tablespoon of olive oil over
medium-high heat until shimmering. Next go ahead and add the mushrooms. Season with salt and pepper
to your taste. Don't stir the mushrooms for the first two minutes so they can start to brown
properly and develop that rich deep flavor. Dice two cloves of garlic. Lovely people if you enjoyed
this video please give it a like I really appreciate your support. Cook the mushrooms
until they're soft and lightly browned on the edges about five to six minutes
stirring occasionally. Now mince a handful of fresh parsley.
When the mushrooms are nicely golden and browned reduce the heat to low.
Then stir in one tablespoon of butter along with the minced garlic
and cook for about 30 seconds to a minute just until fragrant.
Pour in the sauce mixture we made at the beginning and cook for a minute or two until it thickens
slightly. Let me know in the comments would you try these recipes and which one is your favorite?
I'd also love to hear how you like to prepare mushrooms as a side dish. Let's learn from each
other. Finally add in the parsley for a touch of freshness. Give it a quick mix and turn off the
heat. Our gorgeous garlic butter mushrooms are ready and my kitchen is filled with the most
amazing aroma. I hope these recipes bring warmth to your table and a little joy to your day.
See you in the next one.
