
Slow days in the French countryside, spring cleaning in the garden, baking French chouquettes.

How have you been?
The weather has been so sunny lately, it feels a bit like summer already. I went to hike with my sister on the coastline in Brittany; it was gorgeous, and even if I'm not the sporty type, I managed to go to the end of the trail and back; the view was amazing. It was so hot we decided to go for a dip in the ocean on our way back.
Back home I started a little spring cleaning in the garden and weed my flowerbeds, I usually have a lazy method in the garden and I weed the wild plants only when they took too much place from the one I planted.
Finally, I baked a favorite snack of mine, the classic French "Chouquettes"; it's usually something I buy in a Boulangerie, but I tried to make my own for the first time. It was pretty easy if you ignore my awful piping bag method. 🙈

☀️ Chouquettes recipe ☀️
100g Unsalted butter
250ml Water
150g Flour
A pinch of salt
One tablespoon of baking powder
2 Tablespoons of sugar
Vanilla (optional)
3 Eggs
Pearl Sugar for the top
1 . Preheat your oven to 210°C
2. In a pan mix together the butter and water and bring to a boil.
3. Away from the fire, add the flour, salt and baking powder mix together and mix with a wooden spoon. It should form a ball that does not stick to the pan.
4. Transfer the dough to a bowl and add the sugar, vanilla and the first egg. Mix vigorously until fully incorporated.
5. Add the remaining eggs one by one, until the batter is smooth.
6. Form the chouquettes on a sheet pan with parchment paper. You can use a piping bag or a spoon.
I put about one tablespoon of batter for one chouquette, but they were very big you can use more or less depending on the size you want.
7. Sprinkle with pearl sugar.
8. Bake for 20 minutes (depending on the size of your chouquettes) until golden brown.
