The food prices are rising but what if your garden could feed you in just a few weeks. Today
I'll show you eight vegetables you can plant and harvest in under 30 days right from your backyard
from your balcony or even in a sack. Welcome to lively garden my name is Vivian and here we
encourage you to grow your own food the organic way. And to start us off is fenugreek. Fenugreek
is one of the fastest growing crops in my garden germination takes around two to four days it's
very quick you will see sprouts almost immediately. Harvest it around 14 to 21 days it's perfect that
baby leaves are tender and nutritious and you can also harvest the sprouts and all the microgreens
and cook those instead. Fenugreek is rich in iron and how I like to harvest it is I can cut with
scissors just above the soil and sometimes I uproot but you don't have to uproot you can just leave
the roots intact so that it can regrow. You can usually get one to two more harvest from the same
planting. So make sure you harvest fenugreek it's one of the fastest and most forgiving crops you
can grow it doesn't need a lot of space grows well in containers or shallow trays and is perfect
for beginners. Our next crop is radish. Radish is one of the fastest root crops that you can plant
germination starts within two to five days it's very fast and then you can start harvesting within
three weeks. Radish is rich in vitamin c which boosts immunity and how you supposed to harvest
your radish you gently loosen the soil and pull out and pull the root out harvest when the radish
is about a thumb size you can see mine are overgrown which is not good don't leave it long
in the soil overgrown radishes become hard woody and spicy although mine I was not really growing
them for food I was growing them as trap crops that's why they have overgrown but I look for
the ones that are not overgrown and then maybe I can pickle those ones. So make sure you plant
radish. Radish is one of the easiest and fastest vegetable you can grow especially for beginners
it grows well in small spaces containers and even shallow beds making it perfect
for urban gardening. The other vegetable we're going to talk about is beans but we will talk
about the beans leaves and not the pods so germination takes 47 days and you can start
harvesting the leaves within two to three weeks 14 to 21 days. I know most people grow beans for
the pods but the leaves are also edible and highly nutritious this makes beans a two-in-one
crop and I love those ones you can start harvesting early without waiting for the pods and the beans
leaves are they are a good source of plant protein and they're rich in fiber which supports digestion
so how you should harvest you pick the young tender leaves from the plant you can just use your hands
your fingers or scissors the most important thing if you still want the beans to continue producing
the pods do not strip all the leaves leave enough for the plant to continue growing and producing
beans. The other vegetable we are going to look at is the sweet potato not the tuba but the sweet
potato leaves this one established within three to five days from vine cuttings and you can harvest
in 14 to 21 days after planting sweet potato leaves are one of the easiest and fastest vegetables you
can grow you don't even need seeds just plant a vine cutting and it quickly spreads and they are
very rich in vitamin a which is great for eyes and immunity so how you harvest you just snip the young
tips and tender leaves and then you can harvest often to encourage more growth don't cut the
entire plant leave the base so that it keeps spreading and producing. The other vegetable
is spinach. Spinach germinates in 5 to 10 days and you can start harvesting from 21 to 28 days
spinach is one of the most popular fast growing leafy greens and for good reason it grows quickly
produces a lot of leaves and is perfect for both beginners and small space gardening. It is rich
in ion which supports energy and blood health. How I harvest my spinach is that I pick the outer leaves
because those ones are the ones that mature fast and then you leave the center to keep growing
this method gives you continuous harvest over time healthier longer lasting plants. Another
vegetable that you can plant and harvest within 30 days is lettuce. Lettuce germination takes place
between day 3 to day 7 and you can start harvesting from 21 to 30 days and for baby leaves you can
start harvesting even earlier around 14 days around two weeks. Lettuce is one of the easiest
leafy greens to grow and is perfect for beginners. It grows quickly doesn't require much space and
can be harvested multiple times if done correctly. Lettuce is rich in vitamin A which supports vision
and skin health and how I like to harvest my lettuce is that I start harvesting the outer leaves
so I use just use my fingers to cut out the older leaves on the outer leaves or you can also cut
the whole plant you can just remove the whole plant if you want a full harvest but if you just
want a few leaves just to make salad or a sandwich for the day you just pluck the outer leaves and
leave the rest to continue growing. The other vegetable is Chinese cabbage and Chinese cabbage
germinates within three to five days and you can start harvesting from the third week. Chinese
cabbage is a fast-growing leafy vegetable that produces tender mild flavored leaves when harvested
early it doesn't require a full head to be useful you can start picking leaves within a few weeks.
Chinese cabbage is rich in vitamin C which supports immunity so how I harvest my Chinese
cabbage is you can harvest the whole the whole plant or you can just be removing the leaves
gradually and then leave the rest to continue growing. The other vegetable is kale. Kale is a
leafy green that grows steadily and produces for a long time while it's slightly slower than the
others that I have shared it's the slowest among all the other crops that I shared it still qualifies
as a fast crop because you can still start harvesting just before 30 days and most of
these leafy greens you don't even have to start them from seed if you have a nursery where you
can buy the seedlings that gives you a very good kickstart. So if you're starting from seeds
germination for kales takes place between five to eight days and you can start harvesting just after
three weeks. Kales are highly nutritious they're very high in vitamin C which boosts immunity
and the best way to harvest is to start picking the lower or the outer leaves first then leave
the center or the growth point intact and this allows continuous growth multiple harvest over
time and a longer lifespan. Before I wind up I want to say I get some of these video ideas from you
and thank you so much. So before I shoot any video I go down to the comment section and I check what
you are asking me or what information you want. So if you have any question or if there's a video
you want then please drop it down in the comment section I will just note it down on my notebook
and I will definitely do it. There's another comment just so recently or just a few hours ago
