So lots of goodies in the description below.
Recipe number one is one of my favorites because it is so packed with protein
and it's super kid friendly.
We're going to be making our protein white bean alfredo.
Our alfredo sauce is going to be packed with protein, low in fat, high in fiber.
It checks so many boxes.
We're also going to be adding some organic soy milk into the mix
to make it even more protein rich.
And then instead of just your standard wheat pasta,
we like to use chickpea pasta because it is so rich in protein and iron.
And to add a little bit more nutrition,
we're going to be steaming some broccoli and some frozen green peas.
For this recipe, you'll need one can of drained and rinsed white beans.
You can use cannellini.
You could use butter beans.
One eight ounce box of chickpea pasta.
One head of broccoli.
One cup of frozen green peas.
Half teaspoon of garlic powder.
Two to three tablespoons of nutritional yeast and salt and pepper to taste.
So now that my beans are drained and rinsed, which took me just seconds,
I'm going to put them into my mini Nutribullet blender cup,
along with my spices and my soy milk.
Three tablespoons of nutritional yeast because we love it.
It's even another source of great protein, iron and B vitamins.
A crack of pepper and a generous amount of our pink Himalayan salt.
And then about a half teaspoon of garlic powder.
So these are our protein rich staples.
These are the brands we love.
There's no affiliation here,
but we love our West Life.
Two ingredient organic soy milk, chickpea organic pasta.
We love these white butter beans.
They're organic, no salt added.
And then this unfortified nutritional yeast from Sari Foods.
These are all linked on our Amazon store.
So go check it out if you're looking for quick and easy places to get your
groceries delivered to you.
So while I was just talking and telling you how to do the recipe,
I've had two pots boiling.
One to steam our broccoli and our peas and the other one to boil our pasta.
So I'm going to do that while I'm blending our Alfredo sauce.
And if you wanted to make this sauce even more creamy and rich,
you could add a half to a quarter cup of soaked raw cashews.
Okay. So our pasta is cooked.
I'm going to mix in our Alfredo sauce and this is something you don't have to
use all of it.
You could set this aside and use it as a dressing or for over a baked potato.
You could do so many things with this sauce. There you have it.
Our protein white bean pasta Alfredo is complete in well
under 10 minutes and it is so nutrient dense.
So the theme here today is low effort for maximum nutrition.
We're not compromising on getting what we need and we're also not compromising
on taste at all.
When it comes to easy and effortless without sacrificing on nutrition,
compliment is our top pick,
which is why they have been our longtime partner here at Eat Move Rest.
So if you have not already, please check out the compliment essential.
Essentially what you do is just take three capsules a day and you get everything
that you need to fulfill your nutritional requirements for a plant-based diet.
So there's no overkill.
It just contains the eight critical nutrients that you want to make sure you're
staying on top of. And as the name states,
this is not a supplement. It is a compliment.
So if you're like me and you felt a little burned out,
taking tons of different pills, potions,
and powders just to meet your nutritional needs,
compliment is the best thing to replace them with. It's everything you need,
nothing more all in one place.
Recipe number two is one of my personal favorites because I am a sweet potato
addict.
So we're just going to make some plain and simple stuffed sweet potatoes.
If you have a microwave,
this can be the most effortless meal you'll ever make.
You're going to microwave your sweet potato based on the size,
anywhere from four to six minutes. If you're like us,
we have not owned a microwave in over 10 years.
What I like to do is just make baking sweet potatoes a part of my weekly meal
prep.
So grab a grip of potatoes and pop them in the oven at 400 degrees Fahrenheit
for anywhere from 45 to 60 minutes.
Do it at the beginning of your week and keep them in the refrigerator.
And then it's really easy to just grab one of these and top it with the
toppings I'm going to talk about next.
So I've got a whole medium sweet potato. I put a slice in it.
I didn't cut it all the way through just enough to help it steam up better and
quicker. And I'm also going to wrap it in tinfoil,
which will also expedite the process and keep it from getting dried out.
This is going to be a little steam pouch. While my sweet potato is baking,
I am going to put together all of my toppings.
Here's what I gravitate towards. My favorite store-bought hummus.
That's organic, super clean, simple ingredients,
great protein and healthy fat source.
Some sliced diced or whipped up avocado with a little crack of salt and pepper.
And then for quickness sake, we're doing some canned rinsed chickpeas.
And then I like to have something green at every meal if possible.
So we've got our boxed spinach. I'm just going to finely,
finely chop it and sprinkle it on top.
You could also add on some salsa, some hemp seeds, maybe some sriracha.
If you have a leftover,
one of my favorite things to do when we have chili is do a loaded baked sweet
potato with the chili on top of it as leftovers.
There are so many options here,
but one thing I make sure to do at meals is to have a green,
a bean and a protein and a healthy fat. So green bean, protein, fat.
So I've added my sweet potato to my dish.
I'm going to mash it with a fork a little bit,
and then I'm going to add all of my toppings. So I am a huge hummus fan.
Just take one or two teaspoons and just kind of mash it in there.
Make it nice and creamy. Canned chickpeas,
convenient, nutritious, delicious.
Cubed avocado in the mix.
The chili that we're about to make would go great on top of this as well.
Recipe number three is a dump and go chili recipe. It's going to be again,
loaded with protein, fiber, lots of iron,
and it's going to be full of flavor.
And literally we just dump everything in the pot and let it simmer.
There are a lot of ingredients,
but the fact that they're canned makes it so simple and quick to pull off.
So we've got one cup of canned green or brown lentils.
We've got one can of kidney beans, one can of chickpeas drained and rinse,
one cup of frozen corn, one can of fire roasted diced tomatoes,
one can of tomato sauce.
And we'll add in our lentils and our beans,
sweet corn, and then our spices.
One teaspoon of cumin, a half teaspoon of smoked paprika,
a dusting of cinnamon. Trust me, it helps.
A half teaspoon of garlic powder and a half teaspoon of onion powder,
salt and pepper to taste.
You could also add in an optional splash of maple syrup to kind of cut down on
any acidity and then one to two cups of water or veggie broth,
depending on how thick or thinned out you want your soup to be.
Last but not least, our chili is now complete.
So I did top it with some chopped greens.
I would also recommend using a dollop of coconut or just a teeny bit of
maple syrup to kind of cut down on that acidity.
The coconut will add a little bit more creamy richness.
You could also sprinkle some hemp seeds or add some diced avocado on top.
