Aloha friends, Christina here and today I'm going to show you how I make my favorite raw vegan
fettuccine sauce and I'm going to share with you what I'm eating for dinner tonight. I am standing
in my home kitchen right now because you would not believe the week that I've had. My garage
flooded a few days ago and for those of you who know this, I have a second kitchen in my garage
that I typically use to make more of my recipes that you've seen me in and whatnot. But a pipe
bursted and there were three inches of water that flooded my garage and it's been a really
challenging situation but I'm leaning into it with the mindset that that space needed to be
cleansed and so now I'm pretty much having to redo my entire garage and kitchen area that's there. So
I'm going to be in my home kitchen with you all today and probably for a little bit of time and
I'm just going to continue to share with all of you what's happening in my life and all of the
nourishing meals that I am making myself to get me through this time in my life. If you watched my
last video then you know my week has been a little wild. On top of already grieving the loss of my
father, I rescued a stray female dog who just had a litter of puppies who ended up having a lot of
medical issues and I had to get her help and then all of a sudden all of my animals started to have
some issues that needed attention and then my garage flooded. So I feel like I've been really
strong and I've been navigating all these things with a lot of grit and grace and my one constant
right now that has kept me inspired and motivated to grow and move forward has been the one percent
rule that me and my mom agreed to to be one percent better every single day and also to stay committed
to my non-negotiables of making sure that I'm eating nourishing raw foods every day, that I'm
getting in my exercise, my movement, my breath and that I'm also getting in enough sleep. Those have
been the things that are getting me through this time and so I'm just sharing my journey and I'm
hoping that this is encouraging those of you who are going through something challenging as well
just to continue to keep showing up for yourself because it matters so much and sometimes that
one percent in the day might mean making yourself a nourishing meal, making yourself a delicious
sauce. It might mean getting in that workout that you didn't get to do the day before. Maybe it means
getting in bed an hour earlier. Whatever it might be, I'm with you. You're not alone and our goal is
to be one percent better every single day. So for dinner tonight, I'm going to be making a raw vegan
fettuccine using kelp noodles and making a delicious, creamy, savory and super rich
fettuccine sauce and we'll add a touch of mint in there as well to give it some extra flavor
and this sauce is one that you can batch make and that you can use throughout the week not just for
noodles but for salads. You can use it as a dip. It has so many different purposes and it is so so
good. I've just added this new rendition of this fettuccine recipe to my Fully Raw Recipe app.
It's right there featured on the home page so you can check it out there. My app is available on
iTunes and Google Play and I've added those links below for you as well so you can get this recipe
on the go at any time. You are going to need a high speed blender to make this recipe.
I'm going to be using my new Vitamix X1 blender to make this recipe and normally I use my Ascend
series because my Ascend series is so fancy but I happen to love the new X1 model that Vitamix
just came out with because it's a nostalgic model that takes you back to the original
Vitamix containers. They brought back their tall containers and for making sauces like this it is
so much easier. Oh my gosh I can't recommend it enough and believe it or not but the X1 is more
affordable than some of their other blenders and so if you're looking to get a new blender
check out their new X1. It's basically their old models brought back to life in a modern form.
I love the X1. If you're looking to get a new blender definitely check out the Vitamix sales
link that I've put below for you. It is their ultimate sales link. It'll give you free shipping
on orders of $50 or more and it'll take you to the best deals that are there. It'll also let Vitamix
know that I sent you and I so deeply appreciate that so definitely check out the link in the
description below. Alright so let's jump into making some dinner. First things first let's get
started with our kelp noodles. You can use any noodle that you want for your fettuccine. In the
vegan world we typically use zucchini. I also love to make cucumber noodles and something else that's
pretty special and fun that I really like to do on occasion a couple times a month is I love kelp
noodles. They're rich in iodine and other minerals. It's basically a seaweed right but it's a noodle
and it doesn't smell or taste fishy and the way that I soften my kelp is I soak it in warm water
with lemon juice and salt just for about five minutes and it gets really really soft and I
absolutely love it and when you add in this fettuccine sauce it soaks it up so much and it's
just the perfect bite that just slowly melts in your mouth. So today I'm using kelp noodles. Soften
them as needed with lemon juice, salt, and warm water or if you prefer use zucchini noodles or
cucumber noodles instead. You could even make carrot or beet noodles as well and once you have
your kelp noodles then we'll go ahead and we'll make our sauce. So I've already got my ingredients
prepped for the fettuccine sauce and this is enough for about two servings. So it's about
double maybe even triple the amount that I'm going to use today but I'm going to save a lot of it to
use for later. So just use as much as you want or as much as you feel comfortable with. Just know
this is not a single serving. I'm making a batch amount, a large amount to use over the course of
a week. So here's what I have in my fettuccine sauce. When ready go ahead and add into your
Vitamix blender approximately one cup of soaked rinsed and drained cashews, three cloves of garlic,
the juice of a half a lemon or lime. You can use a whole lime or lemon if you want it to be a little
extra tart. A half a cup of sunflower seeds, two tablespoons of raw tahini or raw macadamia nut
butter, your choice. One teaspoon of pink Himalayan salt and to begin a half a cup of water, just a
half a cup. You can add more water as needed to help it blend. Blend this up until it becomes
completely smooth and creamy. You will need to use your tamper and the secret here is to not add too
much water because you don't want this to be a watery fettuccine sauce. You want it to be thick,
almost kind of like a cream cheese or something but you can always add as much water as needed
to help it blend. You just want it to be thick and creamy. Once you have finished blending your
fettuccine sauce, go ahead and pour it over your kelp noodles in a mixing bowl and mix it together
very well. You can use mixing spoons or mixing forks. I love using my hands when mixing the sauce
in with the kelp noodles because it really gets in there nicely. So I use my hands, not meaning to
freak anybody out, but that's just how I mix my sauce into my noodles. And once you have finished
mixing your sauce in with your kelp noodles, you can go ahead and move this into any serving bowl
of your choice. Oh and by the way, I'm using two bags of kelp noodles here for a single serving for
my dinner. You can use one bag of kelp noodles or you can use two bags of kelp noodles. Some of my
friends who eat even more than me might even do three bags of kelp noodles. As you can see, this
was a very simple and quick process. It took me less than 10 minutes to make these fettuccine noodles
and the sauce. And because I have extra time and because I got these gorgeous tomatoes from my
neighbors, I'm going to make a little extra salsa to enjoy on the side. And trust me when I say that
these noodles combined with salsa, the combination of the salsa and the noodles with a little mint
on top is a heavenly, creamy, juicy, delicious, and flavorful dinner. I'm just going to make a
because this really is about the homegrown, fresh heirloom tomatoes that I have. I'm simply
going to chop up my tomatoes into cubes as small as I can. I'm going to finely dice some fresh
cilantro, some red onion, a little bit of garlic. I'm going to sprinkle on some pink salt. You can
even squeeze in some extra lime or lemon if you want. And voila, you've just made an extra salsa
on the side to add extra flavor into your dinner if you want. Not to mention, this salsa will stay
good in the fridge for the next couple of days as well, and you can enjoy it with anything.
Look at this beautiful bowl. This is what I'm eating for dinner tonight. Raw vegan fettuccine
alfredo with a side of kale and pico de gallo on top. So it's a mix of salad and pasta with a mix
of creamy and savory and juicy and delicious. This bowl is so, so good. I might add a little
extra avocado on top, maybe a little extra mint, but other than this, this is my dinner tonight.
And trust me when I say that this bowl is filled with a lot of love that I'm excited to indulge in.
