My incredible trip through New England continued as my friend Chef Keith Sarasin made me some chili paneer at his home in Manchester, New Hampshire! Come with me as we enjoy a homemade version of my favorite Indo-Chinese dish!

Keith is the chef and owner of The Farmers Dinner and Aatma Restaurant. He loves Indian food just as much as I do, and he’s a whiz at making it, too! Instead of using cow’s milk, he’d be using goat’s milk cheese.

The paneer was incredible. He marinated it overnight and cubed it before adding some Desi ghee to his kadai pan. Then, he chopped up peppers and onions and sauteed them before adding the paneer cubes. Then he added Kashmiri chili powder and continued searing the paneer.

Next, he added a sauce of lacto-fermented chilies. The paste was spicy! Finally, he added some micro cilantro. And within minutes, it was complete! It was piping hot! Then, we plated it with some rice.

The chili paneer was so tasty! I loved the mix of spices, the vinegar flavor in the sauce, the marination on the paneer, and the kick of heat! The heat was subtle and not overbearing, and the cheese wa still crumbly. It was the best chili paneer I’ve eaten in my life!

It also worked very well with the rice. The peppers gave it a nice sweetness, and the acidity of the onions was really nice, too! It was so good, I had to finish it, but it made me sweat! Then, Keith showed me all of the spices he uses in his dishes, including green cardamom, black cardamom, cumin, black mustard seed, ajwain seeds, black pepper, garam masala, Kashmiri chilies, and cinnamon.
