In this new series, I want to dive even deeper into the world of Indian food and show you guys what goes into making these mouthwatering dishes. Come with me to Bombay Darbar in Miami as I show you how they make one of the most popular Indian dishes in the world, butter chicken!
Butter chicken is the number one Indian dish in America. It's also known as murgh makhani and was first invented by accident in Delhi in the 1950, when a pair of restaurant owners mixed leftover tandoori chicken in a rich, creamy tomato-based gravy.
First, they dice the chicken and marinate it in a mixture of dahi, lemon juice, Kashmiri red chilies, garam masala, ginger, garlic, and salt. Then, it's cooked in a tandoor and served in a smooth, velvety curry made from tomatoes, cream, and butter.
Some variations add garlic, ginger, cardamom, cloves, cumin, coriander, cinnamon, pepper, fenugreek, and garam masala.
It all results in a rich, creamy, and savory chicken dish. It’s a great way to introduce Westerners to the wonders of Indian food, as it’s not too extreme. Eating it with naan takes it to a whole new level!
