
Delicious fried spring rolls wrapped in betel leaves.
Pork and Betel Leaf Spring Rolls
200g minced pork (loin minced twice)
200g minced beef (use fillet or beef shank) (or substitute with minced shrimp)
2 shallots, 2 shallots, 2 spring onions, 1/2 lemongrass stalk
15 betel leaves (15g)
Seasoning: 1 teaspoon oyster sauce (7g) 1 teaspoon soy sauce (5g)
1 teaspoon sugar (5g)
1 teaspoon seasoning powder (4g)
1 teaspoon pepper (3g)
1 teaspoon sesame oil (3g) 1/4 teaspoon MSG (1g) 1/4 teaspoon lemon juice (2g) (If replacing beef with shrimp, omit lemon juice)
Fish Sauce: 1/2 cup water (125g), 2 tablespoons fish sauce (30g), 1 tablespoon sugar (20g) ½ tablespoon of lemon juice and a little garlic and chili.
