In this cosy spring vlog, I share a few simple recipes from our home kitchen — a lemon meringue pie for my son’s birthday, a comforting Mediterranean creamy chicken dinner, and a slow breakfast inspired by traditional Irish boxty pancakes as St Patrick’s Day approaches.

For the lemon filling
Zest of 4 lemons
Juice of 4 lemons
80 g cornflour
600 ml water
160 g sugar
4 egg yolks
For the meringue
5 egg whites
230 g sugar

🍅 Creamy Mediterranean Chicken
Ingredients
8–10 chicken thighs (skinless)
3 tbsp extra virgin olive oil
3 shallots (or 1 red onion)
2 garlic cloves
1 tin anchovies
150 ml sherry (or Marsala wine)
150 ml chicken stock
1 tbsp cornflour
1 tbsp cold water
190 g cherry tomatoes
90 g black olives
150 ml cream
Salt and freshly ground black pepper
To serve
Broccoli
Mashed potatoes

Ingredients
130 g grated potato
(or leftover mashed potatoes)
130 g plain flour
¼ tsp bicarbonate of soda
½ tsp salt
250 ml buttermilk
(or milk with a little lemon juice or vinegar)
