Hi guys and welcome back.
Today I'm going to be showing you how to make these lemon and blueberry cookies.
Let's begin.
To get started on the recipe, you'll want to grab yourself a mixing bowl and into your
mixing bowl place your butter, followed by your light brown sugar and your granulated
white sugar.
Then mix them all together until they are lighter and fluffier in colour and consistency.
You're not looking pretty like a cake, light and fluffy, but more of a well combined kind
of consistency.
Something a little similar to this.
Once you've achieved this, you can then go ahead and add in the egg and the vanilla.
Feel free to also add in some lemon zest if you wanted, but when I've done that in the
past I've found that it bakes a little bit bitter, but again the choice is completely
up to you.
Once the egg and vanilla are fully incorporated, just go ahead and give the bowl a quick scoping
down.
This is just to incorporate any bits that may not have been fully worked in.
Once you've done that, you can then add in your flour, your white chocolate chips, not
forgetting to add in your baking powder and your frozen blueberries which have been coated
in some plain flour.
Then mix on a low speed to start with, working your way up to a medium high speed and once
you have a dough form, stop mixing.
You do not want to over mix this, it's better to slightly under than to slightly over with
cookie dough.
Take your scoop and scoop up your dough and then just roll it between your hands into
a ball shape and slightly flatten and place onto a tray.
Repeat the process until you have a full tray.
I get 5 onto my standard tray but you could probably get 6 if you wanted, but with the
scoop I'm using I get 5.
You can then go ahead and place these into the preheated oven and bake them off.
All that information will be on the blog post which will be linked down below.
Once they're baked, you can go ahead and finish them off, feel free to leave them as
they are.
I also like to add on some more white chocolate chips just for a bit of extra garnish or flair,
why not?
But the choice is up to you, it's really your choice.
So thank you so much for watching, I hope you enjoyed.
