This is a classic, old-fashioned British dish that many still remember but rarely see anymore — the tattie floater.

A thick lentil and bacon soup with a whole roasted potato dropped in the middle. As the potato melts, it transforms the simple soup into a hearty, warming meal that has nourished families for generations.
Ingredients (Serves 4)
For the Lentil & Bacon Soup
• Smoked streaky bacon or bacon lardons 200 g | 7 oz | ~1½ US cups | ~1½ UK cups
• Butter or dripping 1 tbsp | 14 g
• Onion, finely chopped 1 large (150 g | ~1½ US cups | ~1½ UK cups)
• Carrot, diced 1 medium (100 g | ~¾ cup US | ~¾ cup UK)
• Celery, diced 1 stick (50 g | ~⅓ cup US | ~⅓ cup UK)
• Red lentils, rinsed 250 g | ~1 cup US | ~¾ cup UK
• Garlic, minced 2 cloves (2 tsp | ~6 g)
• Bay leaf 1
• Dried thyme ½ tsp
• Black pepper ½ tsp
• Salt ¾–1 tsp (to taste)
• Water or light stock 1.25 litres | 5¼ cups US | 5 cups UK
