3-Ingredient Peanut Butter Oatmeal Cookies

Today I'm making peanut butter oatmeal cookies using just three simple ingredients. The last
time I shared a simple peanut butter cookie recipe, so many of you mentioned how it reminded you of
baking with your mother, your grandmother, and even your grandbabies. Okay, now honestly,
I think that's what makes recipes like this so special. They're simple, they're familiar,
and they just feel like home, and they bring back so many memories. So let me show you exactly how
I made these. For this recipe, I'm using creamy peanut butter, the kind most of us probably grew
up with. This is smooth, it's easy to mix, and it gives the cookies that classic peanut butter
flavor. Now, if you prefer a little texture, you can use chunky peanut butter instead of creamy,
okay. And for the sugar, I'm using brown instead of white. Brown sugar gives these cookies a deeper
flavor and a little more moisture and some texture, which works so well with peanut butter.
I'm adding the peanut butter to the bowl first and spreading it out a bit to make it mix a little
easier. Then I'll add in the brown sugar, and I'm using a sturdy wooden spatula here because peanut
butter can firm up as you mix, and this makes it much easier to get it smooth and fully combined.
I'm going to scoop out my old-fashioned rolled oats and add them in. I like to use rolled oats
here because they give the cookies a little texture without making them too heavy. Now,
I am using my silicone spatula to gently fold and press the oats into the peanut butter,
and as you can see, my dough came together really nicely. Okay, so if at any point yours looks a
little crumbly, just keep pressing and folding until it comes together. Now, this is a three
ingredient recipe, and it's perfect as is, but if you have a few extra pantry staples on hand,
you can spruce these cookies up. Okay, I'm using an ice cream scooper to portion out the dough so
the cookies are all about the same size, and I'll gently roll each one between my palms to smooth
them out. I will bake a total of 11 cookies, and since these don't spread much in the oven,
I'm going to gently press them down with the back of my spoon so that they'll bake evenly,
and these will go into a preheated 350 degree oven on the middle rack for about 10 to 12 minutes,
and the middle rack is just going to help them cook evenly, so make sure you put your cookies
there. Now, even though there aren't any raw ingredients, there's still work that has to be
here. We want the sugar to melt. We want it to caramelize slightly at the edges. The peanut
butter needs to firm up, and the oats are going to soften. I let my cookies bake for 10 minutes,
and I let them rest for about two minutes on the baking sheet before transferring them to
my cooling rack. When you make yours, you'll know the cookies are ready when the edges look set,
and the centers look soft. These cookies are soft, peanut buttery, and perfectly simple.
Give these a try and let me know how they turn out for you. As always, I thank you so much for
your support. For more easy recipes like this, I will catch you in my next one.
