Sautéed Green Beans with Mushrooms, Onions & Red Bell Pepper

Ingredients:

1 lb organic green beans, trimmed and cut into 2 inch lengths

4 medium mushrooms, finely chopped

1/2 of a large red onion, finely chopped

1 red bell pepper, finely diced

2 - 3 tbsp extra-virgin olive oil

Salt to taste

1 tsp garlic granules or to taste

Directions:

Preheat a cast-iron skillet over medium heat. Add the olive oil.

Add the mushrooms and sauté for about 3 minutes, stirring often until softened and lightly browned.

Add the onion, red bell pepper, green beans, salt and garlic. Sauté for 5 minutes.

Cover the skillet, reduce heat to medium-low, and cook for 10 minutes or until the beans are crisp-tender. Test for doneness with a fork.

Remove the lid and continue cooking, stirring frequently, until the beans reach your preferred tenderness.

Serve warm with chicken, ribs, or fish for a delicious, savory side dish.
