This recipe is very easy to make and is spectacularly rich, tender, juicy and with an intense eggplant flavor. The tomato sauce gives it a delicious flavor that contrasts perfectly with the flavor of the eggplant and if we use a good fried tomato bought without preservatives or colorings, just tomatoes, extra virgin olive oil, salt and a little sugar to correct the acidity, it saves us a lot of time.

Eggplant Meatball Ingredients:

3 eggplants (the ones I used weigh 1.2 kg)
1 medium onion
3 garlic cloves
1/2 teaspoon ground cumin (Optional)
A few sprigs of parsley
2 eggs (We'll use 1 whole egg and the yolk of the other)
100 g breadcrumbs (We'll have extra if needed)
A little wheat flour (To coat the meatballs)
Extra virgin olive oil
Salt
Freshly ground black pepper
400 g high-quality homemade tomato sauce (I used Hida Homemade Tomato Sauce)

3 aubergines (The ones I have used weigh 1.2 Kg)
1 medium-sized onion
3 garlic
1/2 teaspoon ground cumin (Optional)
