Welcome to a peaceful Nordic slow-living day in Finland ❄️
We begin the day with a beautiful morning walk around the island with my husband and our beloved dog Hilma 🐕🤍, surrounded by stillness and winter light. After our walk, I prepare a comforting, creamy black root soup with a shrimp topping, warm and earthy, perfect for Nordic mornings.
In the afternoon, I bake a rustic banana cake, moist and simple, ideal for a cozy coffee break.
The next day, I make garlic & onion honey syrup, a traditional homemade immune booster often used during Nordic winters 🍯🧄🧅.
For dinner, I prepare a creamy baked spinach & mushroom dish, inspired by rustic Nordic home cooking, simple ingredients, deep flavors, and comforting textures.
To end the video, I roast barley for homemade barley tea, restock our pantry, brew a cup, and enjoy a quiet tasting moment, a calming ritual to slow down and reset 🍵🌾.

🧈Rustic Banana Cake🍰
🧺Wet Ingredients📌
3 very ripe bananas (about 300 g mashed)
120 g unsalted butter
120 g dark brown sugar
1 large egg (room temperature)
60 g yogurt or sour cream
1 tsp vanilla extract
1 tbsp neutral oil

🧺Dry Ingredients📌
120 g all-purpose flour
60 g rye flour (or oat flour)
1 tsp baking soda
½ tsp salt
1 tsp ground cardamom
½ tsp cinnamon
60 g chopped walnuts or hazelnuts (optional)

Instructions📌
1. Preheat the oven to 175°C
2. Melt butter gently until golden and nutty. Cool for 5 minutes.
3. Mash bananas, leave some chunks, rustic texture is the goal.
4. Mix wet ingredients, whisk brown butter and sugar, add egg, yogurt, vanilla extract, oil, and bananas.
5. In another bowl, mix dry ingredients, flours, spices, salt, and baking soda.
6. Add dry to wet. Fold in nuts. Do not overmix.
7. Bake 45-55 minutes, until deep golden and a skewer comes out clean.
8. Let the cake cool for 20 minutes; the flavor improves as it sets. (If no glaze)

🍯Honey-Glaze & Nut-Finish Your Banana Cake🌰
2–3 tbsp warm honey
3 tbsp chopped nuts (walnuts or hazelnuts)

Instructions📌
1. Gently heat the honey until it is just fluid. Do not boil.
2. Glaze and brush the warm honey while the cake is warm; it will soak in and create a soft shine.
3. Sprinkle nuts immediately. Cool the cake before slicing; flavor deepens beautifully.
