We spend a winter day at home cooking a comforting Galician Spanish vegetable empanada, making a nourishing winter vegetable soup, and preparing a simple herbal infusion to support recovery.
I also create a cosy reading corner by the window — a small space made with what we already have at home, perfect for slow winter mornings with a book and a warm cup of tea.

🥧 Galician Spanish Vegetable Empanada
Dough
700 g plain flour
7 g fast-action dried yeast
1 tsp salt
1 tsp sugar
100 ml olive oil
Up to 400 ml water (added gradually)
Filling
1 large onion
2 garlic cloves
3 carrots
1 leek
1 red pepper
1 green pepper
1 courgette
1 aubergine
Kale (instead of grelos)
Extra virgin olive oil
Salt
Freshly grated nutmeg
Egg (optional, for brushing)
🥣 Winter Vegetable Soup
40 g butter
1 large onion
1 leek
3 garlic cloves
1 carrot
1 celery stalk
1 small potato
5 spring onions
250 g spinach
About 1.5 litres vegetable or chicken stock
Salt and pepper (to taste)
🍵 Winter Infusion (for recovery)
Water
4 cloves
1 cinnamon stick
1 teaspoon Fresh ginger
1 tbsp chamomile
1 tbsp hibiscus
A splash of lemon juice
Honey (added at the end)
