🎄❄️ GINGERBREAD LATTE CAKE WITH SNOW FROSTING❄️ 🎄
🧁Dry Ingredients📌
220 g all-purpose flour
1 ½ tsp baking powder
½ tsp baking soda
1 tsp cinnamon
1 tsp ginger
½ tsp cardamom
¼ tsp nutmeg
⅛ tsp ground cloves (optional)
Pinch of salt

🧁Wet Ingredients📌
120 g brown sugar
80 g white sugar
2 large eggs
120 ml strong coffee or espresso
120 ml milk
120 g melted butter or oil
120 g Greek yogurt or sour cream
1 tsp vanilla extract
1 tbsp dark syrup or molasses

☁️❄️ SNOW FROSTING (Whipped Cream Frosting)❄️☁️
450ml cold heavy cream
3-4 tbsp powdered sugar
1 tsp vanilla
Optional decoration: coconut flakes, powdered sugar, rosemary, cranberries

🥣 INSTRUCTIONS📌
1. Mix Dry Ingredients
In a bowl, whisk together:
flour
baking powder
baking soda
spices
salt
Set aside.

2. Mix Wet Ingredients
In another bowl, whisk:
brown sugar
white sugar
eggs
melted butter/oil
yogurt
vanilla
coffee
milk
dark syrup or molasses
Whisk until smooth.

3. Combine
Add the dry ingredients to the wet mixture.
Fold gently with a spatula until just combined.
Do not overmix - keep the cake soft.

4. Bake
Pour batter into a 9-inch lined pan.
Bake at 170°C for 40-42 minutes.
Let it cool fully.

5. Make the Snow Frosting
Chill the bowl for 10 minutes or place iced water under the mixing bowl
Add to the cold bowl:
heavy cream
powdered sugar
vanilla
Whip on medium until:
soft peaks → then
10–20 seconds more to medium peaks
Stop immediately to avoid over-whipping.

❄️6. Decorate❄️
Spread the Snow Frosting over the cooled cake.
For winter magic:
Sprinkle coconut flakes → looks like fresh snow
Dust with powdered sugar
Add a small rosemary sprig (tiny pine tree)
Add gingerbread cookies on top or cranberries
