8 cloves garlic
2 tbsp fish sauce
2 1/2 tbsp soy sauce
2 tbsp palm or brown sugar
1 large or 2 small lemongrass stalks
1 tbsp Thai curry paste
2 tbsp oil
Dipping sauce:
1 shallot finely diced
1 tbsp tamarind puree
1 1/2 tbsp lime juice
1 1/2 tbsp fish sauce
2 tsp sugar
1/2 tbsp toasted rice powder
2 tsp chili flakes or birds eye chilis (optional)
Coconut rice:
2 cups (370 g) jasmine rice
1 1/2 cups (360 ml) water
1 1/2 cups (360 ml) coconut milk
2 tsp sugar
1 tsp salt
