Red Wine Beef Stew (Peposo)

■Prep time: 2h 15 min (Simmering time: 2h)
■Servings: 3-4
◯ Beef of your choice (Shank or Chuck eye roll recommended) 600g
◯ Salt 6g
◯ Olive oil 1 tbsp
[A] Red wine 500ml
[A] Garlic 2 cloves
[A] Rosemary 3 sprigs
[A] Bay leaf 1
[A] Tomato paste 1 tbsp
(or 2 tbsp Tomato puree)
[A] Whole black peppercorns 5-8g
◯ Italian parsley (optional)

■Instructions
[Prep]
Cut beef into 5cm chunks and season thoroughly with salt. Halve the garlic lengthwise and crush. Coarsely crush the black peppercorns.

① Heat olive oil in a pot over medium heat, add the beef, and brown thoroughly.
② Add ingredients [A]. Bring to a boil, then reduce heat to low and cover with a drop-lid (or parchment paper directly on the meat). Simmer for about 2 hours.
③ Serve and garnish with coarsely chopped Italian parsley.

Mashed Potatoes

■Prep time: 30 min
■Servings: 3-4
◯ Potatoes 400g
◯ Butter 30g
◯ Milk 100ml
[A] Grated cheese (Parmesan) 30g
[A] Salt 3g
[A] Coarse black pepper

■Instructions
① Place potatoes in a pot and cover with water. Simmer on low heat until tender (20-30 min).
② Remove potatoes, peel while hot, and return to the pot (after discarding the water).
③ Mash potatoes until smooth, add butter, and mix gently. Add milk and mix while heating over low heat. Add [A] and adjust seasoning.

[A] Strawberries 6
[A] Mozzarella cheese 1 ball
[A] Salad greens (Arugula)

[A] Salt 1 pinch
◯ Prosciutto
◯ Balsamic glaze
◯ Coarse black pepper

Remove strawberry stems and cut lengthwise into quarters. Tear mozzarella, greens, and prosciutto into bite-sized pieces. Coarsely crush mixed nuts.
