Tequila is absolutely booming right now! New brands are popping up all the time, and some take shortcuts to save money. But there are still those doing things the right way. Recently, I went to Mexico to see how tequila's really made – from the agave fields all the way to your glass! I met agave farmers, master distillers, and even someone making incredible tequila deep in the jungle.

I love tequila, and it was amazing to learn how much work goes into it. It takes years for the agave plants to grow, the work is backbreaking, and there's a whole culture to it. My first stop was the Cazcanes Distillery – to make great tequila, you need great agave, pure water, and skilled people. Meeting their master distiller, Don Chico, with over 43 years of experience, was a real eye-opener!

Understanding how tequila's made starts with the blue agave plant – this spiky, bluish giant you see everywhere in Jalisco. It takes 6-8 years to mature! The heart of the plant is harvested, cooked to turn its starches into sugar, then shredded and mixed with water. Cazcanes trucks their water in from a special spring over an hour away! Yeast is added, fermentation happens, then it's off to the stills to become tequila. But there's more than just factory tequila – I even got to see a backyard operation in the jungle! Now that's dedication. So the next time you have a shot or a margarita, remember – there's an incredible story in every bottle!
