📝 RECIPE 1 – RED LENTIL BREAD WITH FLAX EGG

INGREDIENTS FOR BREAD:

• 1 cup (200 g) red lentils
• 1 tablespoon (12 g) flaxseed
• ½ cup + 3 tablespoons water (for flax egg)
• 1 tablespoon olive oil
• Salt to taste
• 1 teaspoon ground coriander
• 3-4 tablespoons chopped dill
• 3-4 tablespoons chopped green onions
• ½ cup (50 g) mozzarella cheese
• ½ cup (50 g) cheddar cheese
• 1 teaspoon baking soda
• 1 tablespoon apple cider vinegar
• 2 tablespoons psyllium husk
• Sesame seeds for topping

HOW TO MAKE FLAX EGG:
1️⃣ Grind flaxseed in coffee grinder
2️⃣ Mix with 3 tablespoons water
3️⃣ Let sit for 10 minutes until thick

HOW TO MAKE BREAD:
1️⃣ Rinse and drain red lentils
2️⃣ Add remaining water to lentils
3️⃣ Add olive oil, salt, ground coriander
4️⃣ Add chopped dill and green onions
5️⃣ Add mozzarella and cheddar cheese
6️⃣ Add prepared flax egg
7️⃣ Add baking soda and apple cider vinegar
8️⃣ Add psyllium husk and mix well
9️⃣ Let dough rest for 10 minutes to thicken
