How to make braised chicken[ASMR]

Ingredients:
• 650g chicken thighs
• 400g potatoes
• 6 mushrooms
• 20g ginger
• 6 cloves garlic
• 3 dried chili peppers (to taste)
• 3 green chili peppers (optional)
• 3 red chili peppers (optional)

Blanch the Chicken:
• Add chicken to a pot of cold water.
• Add 10g ginger and 1 tbsp rice wine.
• Bring to a boil, skim off the foam, then remove the chicken.

Sauce Mix:
• 1 tbsp rice wine, 1 tbsp light soy sauce
• 1/2 tsp dark soy sauce, 1 tsp oyster sauce
• Mix well.

Cornstarch Slurry:
• 1 tsp cornstarch + 30ml water

Pan-fry Potatoes:
• Heat oil over medium heat.
• Fry potatoes until golden on one side, flip and fry until all sides are golden.
• Remove and set aside.

Cook the Chicken:
• Heat oil over medium-low heat.
• Add rock sugar, stir until melted and amber in color.
• Add chicken and stir-fry until golden.
• Add ginger and garlic, stir until fragrant.
• Add 3 dried chilies (to taste), stir until aromatic.
• Pour in the sauce and 600ml hot water (enough to cover the chicken).
• Bring to a boil, then simmer over medium-low heat for 10 minutes.
• Add potatoes and mushrooms, stir, cover, and cook for 5 minutes.
• Add 1/8 tsp salt and the cornstarch slurry.
• Turn to high heat and cook until the sauce thickens.
• Add green and red chilies, stir until slightly softened.

💡 Note: 1 tsp = 5ml, 1 tbsp = 15ml
