My locks, they smell so good.
Perfect, let's turn this on.
Okay, great.
Okay, so we have just a few lilacs and blossoms,
and then some rhubarb that we're going to second-ferment the kefir with.
It's going to be very florally.
Well, right now the garden's still pretty...
not much is happening in the garden.
It's just rhubarb and a few of the herbs.
Everything else is still not there yet,
so we're just getting going.
Give me some water.
It's not always that you get to sit her down,
and she sits and eats.
So, baby, do you want some more?
Yeah.
Here.
Oh!
Did you see all those bubbles?
Daniel's much better at explaining this stuff.
So, yeah, this is rhubarb kefir that we made last night.
You can see it's already really fuzzy.
Let's see this one.
It's going, not so much.
This one's probably happier.
This is raspberry.
That one's happy.
We've learned that you have to release the carbonation every couple hours,
because if not, they become explosive,
and then you try to open them, and then they explode everywhere.
You can see there's raspberries all over the house
because we've exploded a few.
Hi, Floor.
See, that one almost went over.
This one's going to...
Do you want me to hold two?
Yeah?
Floor?
This one's going well, too.
We gave Emery, Daniel gave Emery,
he's kind of the handyman that's here at the farm.
He's the best.
He's in his 80s.
But Daniel gave him a bottle to take home the other day.
He said he left it on just his counter for a couple days,
and then his wife opened it, and it just exploded.
The bottle busted off the top, or the lid busted off the top,
and the whole thing just sprayed over her and the ceiling.
Anyways, he said that she told him that he could never bring...
Whoop!
This one's really fuzzy.
...any back into the house,
so he said he was banned from Watercopier, unfortunately.
Oh, wow.
Where was the one that I didn't get all the fizz out?
Can you raise me?
They call it burping, but if you burp them often enough,
and really let all the carbonation out before you put it into the fridge,
then you can pull it out of the fridge and just open it and drink it.
It's when you have them built up and put it into the fridge,
and then you pop it off a few days later, then they explode.
Yeah, before they go into the fridge, make sure that all the gases are out.
Then it'll still keep carbonating, but it won't build up like it does out here.
So yeah, okay.
