Hello everyone and welcome back to my kitchen! Soup season is officially back and today I wanted
to share with you one of my favorite chicken soups! We'll be making my creamy and smoky
marry me chicken soup! And the marry me part is because you'll want to marry the chef after that
first spoonful! This soup is the ultimate cozy, creamy, comfort food! It's so hearty and delicious!
We'll start by rendering down our bacon, sautéing our mirepoix, adding lots of garlic, herbs,
spices, chicken breasts. We'll finish the soup with some pasta, cream, and smoked cheddar cheese,
and a little sprinkle of fresh parsley on top. This is the ultimate fall and winter comfort food!
This soup is so incredibly aromatic, incredibly delicious, and honestly one of my favorites!
Head on down into that video description box for all the recipe details up on my website,
and now let me show you how to make the most delicious chicken soup!
I'm going to get things started with the bacon. I have six slices of smoked bacon that I've diced
into small pieces. I'm going to add that into my cold pan and let that heat up over medium heat.
We'll render the bacon until it's nice and crispy. Add in a couple tablespoons of butter,
and then drop in one large diced sweet onion, three medium diced carrots,
three medium diced celery sticks, and one large diced green bell pepper.
Mix all this together, and we're going to sauté this mixture for about eight to ten minutes,
until the onions and the carrots are nice and tender. Once this mixture is nicely sautéed,
we're going to add in eight minced garlic cloves, a quarter cup of chopped sun-dried tomatoes,
and make sure to blot out any of the excess oil. Two sliced serrano chilies, and if you don't want
the extra heat, you can just leave these out of the recipe. A tablespoon and a half of fresh
chopped rosemary, tablespoon and a half of fresh chopped thyme, one teaspoon of dried oregano,
one teaspoon of dried basil, a teaspoon of smoked paprika, half a teaspoon of dried garlic,
and half a teaspoon of dried onion. Two to three teaspoons of sea salt,
and you could just season this to taste. And of course, lots of ground black pepper.
Mix this all together, and then pour in eight cups of chicken broth or chicken stock.
And now, time for our chicken! We need two and a half pounds of chicken meat. I'm using chicken
breast today. I'm going to drop it into the soup, let it cook, and then we'll take it out
and shred it later. So, just drop it in. You can also use chicken thighs for this recipe,
but I actually prefer the chicken breast here. I'm going to cover my soup with the lid, let it
come up to a boil, and let it cook for about 20 to 25 minutes, until that chicken breast is cooked
all the way through. My chicken breast is cooked through. I'm going to carefully lift it out of the
hot soup, and then use two forks to shred the meat into small, bite-sized pieces.
Some of my liquids have evaporated, so I'm going to add a couple more cups of chicken broth.
I want the soup to be a little bit on the thinner side. Alright, next, we're going to add in one cup
to one and a half cups of small pasta. And this will take just about eight to ten minutes to cook.
We'll drop that in. And once this is cooked, we'll come back to add our cream, and our cheese,
and our soup is just about done! Alright, our soup is almost done! I'm going to pour in two
cups of half and half. If you want your soup to be super rich, you can also do cream instead of the
half and half. Mix it all together. And now, for some smoked cheddar cheese. Six ounces smoked,
grated cheddar cheese. Drop that in, let it melt into the soup. I'm going to add a couple tablespoons
of fresh parsley, three chopped green scallions. Cook that just until the cheese melts, and then
we'll remove it from heat and dig in to enjoy! I wish you could smell the aroma of this soup
through your screen right now, because it's simply mouth-watering! The smoky bacon bits,
and it's just so creamy and rich! Let's pour ourselves a little bowl and dig in.
And I love that the soup has so much chicken! And you have a little bit of the pasta in here,
as well. Some bell peppers, the sun-dried tomatoes. It's going to be amazing!
And that's it for my creamy and smoky Marry Me Chicken Soup! This smells phenomenal! I can't
wait to dig in and enjoy! Just a reminder, you can get the full recipe for this video up on my
website. I have the link right down below in the video description box. Oh, this looks so incredible!
It's such a hearty and warming soup! Let's get a little bit of the chicken and the pasta.
Oh, this looks so good! Mmm! This soup is beyond words, and it's the most perfect way to kick off
soup season! So creamy, so hearty, warming, delicious! I love all the smoky flavor from
the smoky cheddar cheese, the bacon bits, and you have a little bit of tartness coming through
from the sun-dried tomatoes. And this chicken is just so tender! You have little bits of pasta,
little bits of pepper. I love having the serrano chilies in here. They don't add too much spiciness,
just a touch of warmth, which really transforms the soup! You are going to love it!
There is just so much goodness packed into this little bowl of creamy chicken soup! Definitely
one of my favorite soups! And I love to serve it with some toasted garlicky buttered bread on the
side. That's the perfect complement to this incredible dish! Thank you so much for watching
my latest episode! I hope you enjoy this amazing, delicious soup this season,
and I'll see you next time with a new recipe!
