Ingredients for Dhaba Style Egg Masala Curry:
Boiled Eggs- 6
Tempering:
Cumin Seeds- 3/4 tsp
Red Chillies- 3
Green Chillies, slit- 3
Spice Powders:
Turmeric Powder- 1/2 tsp
Red Chilli Powder - 1.5 tsp
Coriander Powder- 1.5 tsp
Garam Masala Powder- 1/2 tsp
Other Ingredients:
Onions grated/paste - 2 medium (120 gms)
Ginger Garlic paste- 1.5 tsp
Readymade Tomato Puree (or tomato paste)- 5 tbsp
Besan -2 tsp mixed in 2-3 tbsp water
Coriander leaves and stems, rough chopped- 4 tbsp
Fresh cream -3 tbsp
Kasuri Methi (Dry Fenugreek Leaves)- 1 tsp
Coriander leaves fine chopped for garnish -1-2 tbsp
Oil-3-4 tbsp
Salt- 1/2 tsp
Preparation
Boil the eggs and shell.
Grate the onions. Slit the green chillies, rough chop the coriander leaves and stems.
Also fine chop around 1-2 tbsp to be used as garnish.
Dry roast the Kasuri Methi (Dry Fenugreek leaves) and then crush it once cooled.
Process
Heat oil in a kadai or wok and add a pinch of turmeric powder. Give a stir and then add the shelled eggs.
Stir and fry the eggs for 2-3 mins on low heat till light yellowish and light brown. Remove and set aside.
In the same hot oil in which the eggs were fried add the cumin seeds, slit green chillies and the dried red chillies.
Give a stir and then add the grated onion and fry on medium heat for around 4 mins.
Now add the ginger garlic paste, mix and continue to fry on medium to low heat for another 4-5 mins.
Now add the rough chopped coriander leaves and stems, mix and fry for a minute.
Now add the readymade tomato paste/puree, mix and cook on low heat for around 2-3 mins till oil separates.
Add all the spice powders other than garam masala powder mix and salt. Add a splash of water, mix and fry on low heat for around 2-3 mins.
Now add the besan in water, mix and cook on low heat for around 2-3 mins till cooked.
Now add 350 ml water, mix , and add the fried eggs after giving cuts on the sides.
Give a stir & cover and cook on low heat for 5 mins till oil separates.
Remove lid and add the garam masala powder, fresh cream & roasted and crushed Kasuri Methi. Give a stir and simmer on low heat for 2 mins.
Garnish with 1-2 tbsp chopped coriander leaves & serve with rice or roti.
