Hello from Seoul!
If you are craving some great noodle stir-fry,
but don't feel like take-out,
and don't want to put too much effort into it,
then you came to the right place!
Trust me!
This is gonna be one of the easiest noodle stir-fries
that you will ever make,
and one of the best weeknight dinners
of your entire life!
I guarantee!
Today, we're gonna be making chili garlic noodles
with ground beef.
Ever since the baby came along,
life has been so busy
that our meals are basically
whatever we can grab in a hurry.
But you know,
we can't just eat quick bites
or take-out every night, right?
So when we crave a super flavorful noodle stir-fry,
I always make this dish
because it's super easy,
budget-friendly,
and insanely delicious!
So if your days are crazy busy like ours,
please give this a try!
If you do,
you will slurp one of the best noodle stir-fries
of all time!
For this,
you'll need some ground beef,
noodles,
onion,
garlic,
green onions,
and a little bit of ginger.
That's it!
Super simple, right?
Honestly,
you can make this dish
with just these aromatic vegetables.
But today,
I'm gonna be adding some cucumber
for our beautiful garnish.
Trust me!
It will add a nice refreshing taste to your noodles
and some crunch.
And if you happen to have some cilantro in your fridge,
feel free to use a little as a final touch.
Trust me!
That's gonna be a good option, too!
Alright, let's start preparing our vegetables.
First,
finely chop a quarter of an onion.
Actually,
today's recipe works perfectly fine
with just garlic and green onions.
But this little bit of onion
will make our aromatic oil
even more fragrant.
So if you feel like that's too many ingredients,
then you can totally skip this.
No problem at all!
Next,
thinly slice 2 to 3 green onions.
Mine is a little small today,
so I'm gonna slice 4 green onions.
And as always,
separate the whites and greens.
The whites are gonna be stir-fried
to infuse our oil
and the greens are gonna be used for our garnish.
Once that's done,
smash 2 cloves of garlic
and finely chop them.
And then,
grab a small knob of ginger
and grate it.
About half a teaspoon
would be enough.
This time,
let's prep the cucumber.
Take half a cucumber
and cut it into thin matchsticks.
Today,
I'm using cucumber as a fresh garnish,
but if you wanna use other crunchy vegetables
like bell peppers or broccoli,
you can also stir-fry them with the noodles.
Trust me,
any crunchy vegetables
will work beautifully in this recipe.
So feel free to play around with
whatever you have in your fridge.
No matter what you use,
it's gonna be all delicious.
Now, let's make the sauce.
In a small container,
add 2 tablespoons of gochugaru,
Korean chili pepper flakes,
1 tablespoon of sugar,
2 tablespoons of soy sauce,
2 tablespoons of oyster sauce,
2 tablespoons of mirin
and give it a good mix.
What?
No chili pepper flakes at home?
That's OK.
Then, just use chili oil instead.
What?
Can't handle spicy food?
Don't worry about it.
Then, you can totally skip it.
No problem at all.

Alright, it's cooking time.
Fill your pot with enough water
and bring it to a boil.
Once it comes to a boil,
add 2 servings of your noodles
and cook according to the package instructions.
For information,
I'm using spaghetti today,
but almost any kind of noodles
will work great for this recipe.
So just use whatever you have
or go with your favorite noodles.
Trust me,
it will all taste amazing.
And no need to season the water with salt
because our sauce
will perfectly flavor the noodles later.
While the noodles are cooking,
let's build our savory meat sauce.
Get yourself a large wok or pan.
Add 1 1⁄2 tablespoons of oil
and heat it over medium-high heat.
Once it gets nice and hot,
add 250 grams of ground beef
and spread it out evenly.
Season with a pinch of salt
and let it sear for about 2 minutes.
Once the bottom turns nice golden brown,
flip and break up the beef
and stir-fry for about 1 to 2 minutes.
Once the beef is beautifully browned
and you've got some fat from the beef,
add the onion,
white parts of the green onion,
garlic, ginger,
and stir-fry for about 1 minute.
This is where the magic happens.
When the fat from the beef
mixes our lovely aromatics,
they will create the incredible flavor
that you're looking for.
So if your beef is too lean
and didn't release much fat,
then just add a little bit of oil
or adding some finely chopped bacon
will be a great option too.
What?
You wanna know this kind of tip
more and more?
I'm so glad you brought that up
because everything you need
is in these two books.

Once your kitchen is filled
with that incredible aroma,
add your noodles
and stir-fry for about 1 minute
so that our beautiful aromatic oil
can coat every strand of the noodles.
Now, let's pour the sauce
and stir-fry for about 2 minutes.
When the sauce is fully combined
with the noodles,
turn the heat off.
Now, all you need to do
is add a half a tablespoon of sesame oil
and give it a final mix.
That's it.
Couldn't be any easier, right?
Even on the busy weeknights,
with this recipe,
you can whip up this incredible noodle dish
in just 15 minutes.
So please give this a try.
I'm sure you will absolutely love this.
All right.
Let's put some noodles and sauce
nicely on a plate
and top it with some cucumbers
and green onions.
And if you want it to be a little spicier,
just add a spoonful of chili crisp.
Then you will get another layer
of incredible flavor.
All right.
It's done.
How does it look?
Looks absolutely fantastic, right?
You want to know how it tastes?
All right.
