안녕하세요, everyone. This is Jia.
Today, I want to make 숙주나물, which is mung bean side dish.
나물 is all about fresh seasonal produce, the right cooking time, and perfectly balanced seasoning.
Mung beans wilt quickly, so if you can't use them right after buying,
keep them in water and store them in the fridge.
They will stay fresh much longer.
You want to add a little bit of carrot, finely julienned carrot to the mung bean namul
because it gives a nice crunchy different texture.
Also, it adds a beautiful color to it.
Chop the scallion, and we're going to use this as a garnish,
and also it adds flavor to this dish.
Place the rinsed mung bean to the pan or in the pot.
Then today, I want to drizzle a little bit of sesame oil
and toss lightly to coat, which helps keep the sprouts from getting mushy.
Make a small hole in the middle and add the carrot to it.
Then we want to steam it, so add about three tablespoons of water to it.
Cover with a lid and heat it.
Cook this until steaming in a high heat.
It started to steam.
Now, I want to cook for 50 seconds to one minute.
Good, it has been 50 seconds.
Turn off the heat and mix it together.
Immediately drain it, and you want to quickly spread it out.
This process is very important to keep your sukju namul, this dish, crunchy.
And then I want to cool it down until it gets to a room temperature.
The mung bean has been cooled.
Today, I want to use two different types of sodium.
You want to season it with a big pinch of salt.
With the fish sauce, just add a few drops, and it's going to work as a hidden taste.
Chopped scallion.
Then you want to thoroughly mix it.
You can serve this dish as a single side dish, banchan, like this.
Just sprinkle toasted sesame seeds just before serving.
And for the leftover, you can put in a small container and keep this in the refrigerator.
It's going to keep up to three days.
Keep this namul, the mung bean side dish, a bit crunchy.
And I recommend not to heavily season it.
Then it will match perfect with any dish.
Thank you for watching, and I'll meet you on my next video.
