At Big Swerves Barbecue in South Jersey,
you can feast on your faves under the
big white tents.
>> We consider our barbecue style more of a
Kansas City and Memphis style, sweet
with heat.
>> Husband and wife team Steven and Darlene
Clark started the business in 2020 in
their backyard.
>> Steven does all of the meat in the
business. And all of the sides are my
recipes. Now they have a restaurant, a
food truck, a catering service, and a
banquet hall named after Darlene's late
grandmother, Stella.
>> Stella's acts as a dining in when we
don't have events. My dream has always
been like a venue or a place that people
can gather.
>> While the business has expanded, the
chef who it's named after has reduced in
size. That is,
>> I've lost almost 100 lbs. Instead of Big
Swerve, they call me medium swerve now.
Chef Steve works his grilling skills
every morning and all through the day in
a modified shipping container that
Darlene bought online.
>> Stephen usually says, "I want this or
what do you think about this?" And then
I go find it.
>> Equipment in the shed includes a huge
smoker he named Big Bottom Betty.
>> My 500galon converted propane tank.
>> He calls his five barrel smokers Quints.
>> I've had my first Quint since probably
about 10 years.
>> He has different grills for different
meats. This is beef only, pork only,
chicken, fish.
>> Inside the kitchen, Darlene runs the
sides show with all the classics using
her own recipes.
>> We do baked mac and cheese and these are
our collar greens and it has smoked
turkey in those.
>> She makes everything from potato salad
to pasta salad, plus honey cornbread and
a dish she calls the mean beans.
>> It's a ground beef and baked bean
combination. Kind of like a chili type
of thing. It can be a meal in itself. A
trip to Big Swerves offers a menu that
includes brisket, St. Louis style ribs,
and pulled pork.
>> Usually cook for no less than 12 hours.
>> Chicken leg quarters can be accented
with signature sauces, and the Jamaican
jerk chicken slider is a bestseller.
>> Boneless thigh marinated in jerk
overnight.
>> The couple met growing up in
Philadelphia years before getting
married.
>> Her family would host old-fashioned
cabaret style parties, and we were
always intertwined in a circle with both
of our families knowing each other.
They're a staple in this community. Now,
>> on Sundays between 3 and 6, the kids eat
free with the paying adult. We really do
try to focus on things that we can do to
give back to the community.
>> And they say they rely on just a few
things for a life they love.
>> Faith, family, food, and fun.
>> They plan to keep firing up the grills
for a long time to come.
>> It's something I'm so passionate about,
it's not even funny. I just love
barbecue.
>> Come get your Swearorn.
