There is sooo many variations to enchiladas but let me show you my ultimate favorite ones that I grew up eating. These Enchiladas Dulces- Sweet & Spicy Enchiladas are filled simply with cheese and onion. So simple, yet incredibly comforting, their perfect balance brings back warm family memories and a flavor I hope you’ll love as much as I do.
Hey guys, today I'm going to share with you how to make some super easy and delicious
enchiladas dulces estilo Durango.
So if you want to learn how I make them, just stay tuned and I'll show you how.
Alrighty guys, so let's get started with our ingredients.
So for this recipe we're going to need corn tortillas, freshly shredded queso Oaxaca or
Monterey Jack, 1 small onion, 15 New Mexico or Guajillo chili pods, 2 chile anchos, 1
1 half a tablet of Mexican chocolate, 3 small garlic cloves, 2 tablespoons of sugar, and
all of our spices that will be listed in the description box.
So these are our ingredients, now let's get started.
Alright guys, so we're going to begin by adding our chile pods into our small saucepan.
Make sure to clean them well.
We're going to cover them with 3 cups of water.
Set it over high heat and bring it to a boil.
Alright, so once it comes to a boil, we're going to turn it off and here we're going
to add our chocolate disc.
Just mix it in there and allow that to melt.
So just give that about 5 minutes.
Alright, so once the chocolate has fully dissolved, we're going to carefully transfer it to the
blender cup.
Make sure you get all of it.
So now we can get ready to make our sauce.
Alright, now to our blender cup we're also going to be adding 1 cup of water, our garlic
cloves, our sugar, 1 quarter of a teaspoon of ground cinnamon and cumin, along with 1
teaspoon of chicken bouillon and salt.
Now we're going to be blending until smooth.
Okay, and once we have it, we can take it back to the stove.
Okay, now we turn it into the same pan, making sure that it is completely dry.
We're going to set it on medium-low heat and we're just going to heat up a little bit of
oil.
And once it's nice and hot, add the sauce.
Strain if you need to.
I'm going to add a little bit more water to my blender cup so I can get all of the sauce
behind.
Okay, so now we're just going to mix it and bring it to a simmer.
Okay, so once our sauce comes to a simmer, taste it for salt and see if you need to adjust
it.
Let me tell you, this sauce is seriously super delicious.
Now we're just going to set it to the side, keep it on the lowest setting just while we
prepare our tortillas.
Okay, now for our corn tortillas, we're going to be lightly frying them.
So set your pan over medium heat, add the oil and allow it to heat up.
Alright, once the oil is nice and hot, we're going to add our tortilla and just lightly
fry it for about five seconds or until it blisters.
As soon as you see those bubbles, we're going to get it out of the oil and just repeat the
same process with the rest of the tortillas.
Alright guys, so once we have our tortillas, now we can get ready to make our enchiladas.
But first, we're going to be mixing our cheese and onion together to make our filling.
And I'm using Queso Oaxaca, but of course you can always use Monterey Jack as well.
But to that, I'm going to be adding my onion that I just grated.
Now just mix it.
Okay, and once we have it, now we can get ready to make our enchiladas.
Alright guys, to make our enchiladas, we're going to grab our corn tortilla, dip it into
the sauce, grab our cheese and onion mixture, grab it and roll it just like that.
And we just repeat the process with all of our enchiladas.
And in between each layer, I'm just going to be topping it with some sauce.
And these ones don't go in the oven, you just serve them as soon as you roll them.
And the heat from the sauce and the tortilla will kind of melt the cheese.
But you don't want it to be fully melted.
Alright, so once we have our enchiladas, now we're just going to top it with some queso fresco.
And just like that, we can now get ready to serve.
Alright guys, and once we have our enchiladas, we can now get ready for the fun part, serving.
So I'm just going to keep it very simple.
Just grab my enchiladas, and I'm just going to top it with some lettuce, some crema mexicana,
some queso fresco, and just some tomatoes.
And just like that, we can now get ready to enjoy.
Alright guys, and now for the best part, the tastiest.
Now let me tell you guys, one of my favorite childhood memories was coming home from school
and just seeing the stack of enchiladas that my mom had just made.
I would just come, you know, home straight to them and just eat them like that, not even serve myself.
I love eating them just like that, you know, with my hand.
But let me tell you that there's so many variations of making enchiladas,
and this right here is honestly my favorite one.
So I hope you give it a try and enjoy it just as much.
Cheers, and enjoy.
The sauce, and then the onion, it's honestly the perfect combination.
And the sauce, you can make it, you know, a little semi-spicy sweet.
That would just depend on the type of chile pasta you use, but this right here is seriously the best.
And my mom told me that my grandma from my dad's, you know, my dad's side,
she used to add banana, you know, instead of the sugar.
That's a good alternative, but they're so good.
Alright guys, and there you have it. I made my super easy and delicious enchiladas dulces.
