Advances in food preservation technology can be traced to traditional preservation techniques used in northern Japan.
In April of 2023, an amazing new food preservation method was unveiled.
These cut flowers have been kept here for over two months.
They say they'll stay in good condition for up to a year without watering.
This lettuce has minor discoloration but remains fresh after two months.
The secret is careful control of the temperature and humidity.
Items are chilled to zero degrees Celsius,
straddling the line between freezing and refrigeration.
To prevent drying, the air is kept at nearly 100% humidity.
The method was inspired by traditional preservation techniques
from snow country in northern Japan.
In winter, vegetables and other foods were kept in snow-covered rooms
in high humidity at temperatures close to freezing.
Produce stored this way tends to stay fresher longer and increase in sweetness.
Strawberries that would spoil in a week can be kept for over three months.
