Here is Mama Lin’s recipe for homemade Chinese chicken noodle soup. It is a delicious and light soup served with wonton noodles, baby bok choy, and carrots. Make it a complete meal by serving the soup with chicken wontons!
Hi everyone, I am very excited to have my mom here today to show me how to make her chicken
noodle soup. Now this is something that she makes very often. She cooks chicken broth with
a whole chicken and it is a very versatile broth. She uses it to make noodle soups, regular soups,
and braised dishes as well. And one of the key ingredients to her chicken broth is Noor's chicken
powder and we are very excited to be partnering with Noor today to show you how to make my mom's
My mom usually makes broth with the freshly butchered chicken that she buys from Chinatown.
This one is about three pounds.
Add the chicken to the pot.
Add some salt to the broth.
Right now we are checking to see if the chicken is fully cooked. I would usually stick a thermometer
into the chicken breast or thigh to see if the temperature of the meat is 165 degrees Fahrenheit.
Mama Lin, on the other hand, pokes the thigh with her chopstick. If the meat is looking pink or
blood gushes out, the chicken is not fully cooked. It's still looking pink here, so we'll cook this
for another five to ten minutes. There we go, now the chicken is fully cooked. Once the chicken is
cool enough to handle, chop up the chicken to serve the meat. Use a ladle or skimmer to skim
fat off the top of the broth.
I think the broth meets my mom's approval.
I bought the chicken breast because I didn't want it to be too fresh.
So I want to use some salt and ginger to wash it together to get rid of the smell.
Mix the ginger and salt together.
After washing the chicken, the smell of the chicken is gone. The broth will be sweeter.
You can see that the water is very cloudy.
And there's a lot of fat, so we have to go through this step.
The broth will be a lot sweeter later. You can see the water is very cloudy.
You can see the water is very cloudy.
Let's wash it again.
Now the chicken is very clean. It's got rid of the smell.
Add the pieces of meat to one quart of boiling water.
You can see that the water is very cloudy.
It's because the meat is too fresh.
We don't want this dirty water.
You can see it's very dirty.
We don't want this.
We pour it away.
We don't want this water.
There are a lot of foam on the sides of the pot.
We have to wash it clean.
Then we'll use that clean water to make chicken soup.
Now you don't have to add boiling water.
You can add cold water to the broth.
It's the same as making soup.
Add the chicken breast and hand meat.
Add a few slices of ginger to get rid of the smell.
Now we cover the lid and cook it.
Now we take the chicken breast out.
Wow, the soup is very sweet.
It's very delicious.
Add a teaspoon of chicken powder to the soup.
For something extra,
make some chicken wontons to go with the noodle soup.
To make the dumplings,
add about two teaspoons of filling into the center of a thin wonton wrapper.
Fold it in half into a triangle
and then bring the left and right ends of the triangle towards the center.
Making dumplings is more fun if you have a couple people working on it.
Cook some fresh thin wonton noodles in boiling water for about three to four minutes.
If you're making the dumplings,
cook them in boiling water for three to four minutes as well.
They'll be ready when they float to the top.
You can also blanch some baby bok choy.
Divide the noodles between several bowls.
Ladle some chicken broth over the noodles.
Then top with some chicken meat.
Add the baby bok choy and some scallions for garnish.
Okay, we are done cooking the chicken noodle soup.
Let me give the broth a try.
I can really tell that the nori chicken powder adds umami flavor to the broth.
Now I know this broth and this whole dish took over an hour to make,
but it is well worth the effort.
I hope you give it a try.
Thanks for watching.
