Serves 4-5
For the Marinated Chicken
1kg (35.27oz) whole fresh chicken
2 tsp salt
10 tbsp or 200ml (6.76fl oz) premium dark soy sauce
15g (0.53oz) young ginger, sliced thinly
1 spring onion, tied into a knot
Other Ingredients
60g (2.12oz) rock sugar or regular white/brown sugar
2.5L water (use about 1.5L of hot water to dissolve the sugar, then top up with the rest)
1 cinnamon stick
2 star anise
2 bulbs of garlic
2 tbsp salt
100ml (3.38fl oz) Chinese rice wine (optional)
A little sesame oil (to coat the cooked chicken and prevent it from drying out)
Seasonings for 300ml of the Sauce
1 tsp salt
2 tsp sugar
A little cornflour solution
