
🥗 Tabbouleh Salad (Parsley Bulgur Salad)
Ingredients
57g bulgur wheat
2 medium tomatoes, finely diced
Juice of 1 fresh lemon (or 2 fresh limes)
100g green onions, finely chopped
200g fresh parsley, finely minced
14g fresh mint leaves, finely chopped
1/4 cup olive oil
Salt and black pepper, to taste
🥣 Instructions
1- Soak the bulgur: Place bulgur in a bowl and cover with boiling water. Let it soak for about 30 minutes until softened. Then drain well using a fine mesh strainer.
2- Prepare the herbs and vegetables:
Dice the tomatoes.
Chop the green onions.
Finely mince the parsley and mint leaves.
3- Mix the salad: In a large bowl, combine the soaked bulgur, tomatoes, green onions, parsley, and mint.
4- Season and dress: Add salt and black pepper to taste. Add the fresh-squeezed lemon (or lime) juice and olive oil.
5- Toss and serve: Stir the salad thoroughly until all ingredients are evenly coated. Chill before serving if desired.
Tabbouleh tastes even better after resting in the fridge for an hour.
