In this video, I'm sharing with you two of my favorite dishes to eat during summer; chicken fajita and shrimp ceviche.
Fajitas are versatile, quick and easy to make. Swap chicken for strips of beef steak, pork, shrimp or tofu. To get the maximum flavor, be sure to try my homemade fajita seasoning!
Ceviche is a refreshing and cooling appetizer.
It can be made ahead...and if you are not keen on using raw seafood, gently poach it in a pot of boiling water for a few minutes.

🌶Chicken Fajita (2 Servings)

[fajita seasoning]

-chili powder 1/2 tablespoon

-ground cumin 1/2 tablespoon

-paprika 1/2 teaspoon

-oregano 1/2 teaspoon

-ground pepper 1/2 teaspoon

-salt 1/2 teaspoon


[other ingredients]

-chicken breast 2 medium, cut in strips

-bell peppers 1cup, cut in strips

-onion 1/2 sliced

-garlic 2-4 cloves chopped

-jalapeno pepper 1/2 sliced

-tomato 1 cup chopped

-cilantro 1/2 cup chopped

-avocado 1 cup sliced


🦐 Shrimp Ceviche (makes 4 cups)

-shrimp 2 cups raw or cooked, cut in pieces

-cucumber 1 medium diced

-tomato 1 medium diced

-red onion 1/4 cup chopped

-jalapeno pepper 1/2 tablespoon chopped (optional)

-avocado 1/2 cup diced

-lime juice 1/4 cup (3-4 limes)

-salt

-ground pepper
