Recipe:
5 eggs.
Each egg weighs approximately 70 g with the shell.
100g sugar (100g).
Beat for 6-7 minutes until fluffy.
140 g flour (140 g).
30 g cornstarch (28 g).
Fold in carefully.
Baking pan (approx. 20 cm diameter).
I usually grease the edge of the pan with a little butter to help the baking paper stick better.
Bake at 170 °C for about 45 minutes.
400 ml whipping cream, 33–35% fat (380 ml).
A good tip: Freeze the cream and the mold for a few minutes before use.
The cream must be very cold so that the desired consistency can be easily achieved.
100 g powdered sugar (100 g).
400 g mascarpone cream cheese (400 g).
2 teaspoons vanilla extract.
Chill the cream while we cut the sponge cake.
Save the pieces for later.
240 ml milk (approx. 300 ml).
