Hi my friends, today I’m going to make authentic king pao chicken宫爆鸡丁. It’s a popular dish, both here and in China ,the recipe I am going to show you will have a slightly different taste than how it is usually prepared here in America .The sauce will be slightly more spicy and not quite as sweet in fact, it has a somewhat somewhat tingly quality to it so let’s get started. I think you will enjoy it.
The ingredients list:
.4 drumsticks(400g)
.1/3cup Carrots
.1/2 cup Cucumber
.1/2 fried peanuts
.3 clove garlic
1/2 tsp ginger
.7 piece dry chili pepper
2 tsp Si Chuan peppercorns
.1  green onion
2-3 tbs Cooking oil
1 tbs Pixian fermented beans paste( 郫县豆瓣酱)
Marinade chicken:
. pinch salt
.1/4 tsp White pepper(or a black pepper)
.1tbs light soy sauce
1 egg white
.1tsp Shaoxing wine
. 1 tbs Cornstarch.
. 1 tsb oil
Make sauce:
2 tbs light soy sauce
2 tbs Dark vinegar(you can use the white vinegar or ketchup)
.1/2 tsp Dark soy sauce
. 1 tsp cornstarch.
.2tbs Sugar
1/2 cup Water
I am using drumsticks, cut down along the bone, then pull to the end and cut off, cut the chicken into small pieces.you can use chicken breast , or thighs . Thing or and drumsticks have better texture and flavor.
. Put chicken in the bowl , add white pepper, egg white
. soy sauce, ShaoXing wine mix them well and let’s meat absorb all the seasoning . You can feel the meat it’s getting sticky then add one tablespoon cornstarch , making meat tender, add cookung oil to lock in the monster, also prevent from sticking together , set aside for 10 minutes.
cut carrot , cucumber into small pieces. Mince garlic and a ginger, chopped green onions, chop red chili pepper into small pieces.
Add oil into wok over medium high heat , add chicken,, sauté, to chicken is done nice and golden. Remove it side aside.
In the wok add oil over medium low heat, add some Si Chan pepper fry when it just begins to change color take it out ,then add chili pepper, ginger, garlic, PiXian Fermented Bean paste , and green onion , fried to fragrance , and oil spread out from bean paste, then add carrots , saute about 30 second, add chicken, cucumber stur fry till turn colorfrom padt, and sauce , turn to medium high heat. Put the peanuts back in stirfry quickly about 20 seconds , our dishes is done
