Hi everyone.
Welcome to Cooking with Lin, simple recipes, easy to make.
Today I'm going to share with you very nutritious chicken soup in Chinese style.
I'm going to cook with dates, goji berries, and mushrooms, shiitake mushrooms.
Chicken soup in Chinese, 鸡汤 jī tāng, let me show you the ingredients.
I have one whole chicken, I already cleaned up.
It's about four and a half pounds, and I soaked eight shiitake mushrooms, and this is eight
dates.
Eight is a good number, right, for Chinese.
I soaked them about an hour.
This is goji berries, and I'm going to just have a quick soak before we add it.
This will be added last, and for the green onions, I'm using the white part of green
onions.
I use half for the first boil, I just give a smack, and for the mushrooms, you can just
leave like this, that's okay, or you can have a cut like this, so this way we are going
to release more flavors, and also we'll soak more flavors from chicken.
As I said, this is optional.
Now I'm ready to cook.
We add the chicken to the pot with the cold water, and turn the heat up, add our ginger
slices and green onions.
We're going to bring this to boil.
Now the water is boiling, just make sure you skim the top, so the purpose of first boil
is to remove the impurity.
Turn it down a little bit, and we'll let this boil about five minutes.
After about five minutes, I'm ready to transfer the chicken into my soup pot.
Now my chicken is in the soup pot, we just need to add warm water, just enough to cover
the chicken, and I need a little bit more water.
Our chicken is covered, and we'll add our shiitake mushrooms, and dates, white part
of green onions, and we're going to bring this to boil.
Now our soup is boiling, and we just need to turn to medium low, let this simmer about
an hour and 50 minutes.
Do not add salt.
So almost an hour and 50 minutes, let's check on our soup, wow, it smells so good, does
it?
It smells great.
Now we're adding goji berries, I just soaked quickly, about 10 minutes, and we'll let this
simmer about another 10 minutes.
Also add some salt, another 10 minutes passed, our soup is ready, wow, looks so good, so
rich, let's have a close-up of our chicken soup, smells so good, wow, pot of gold.
You ready to try?
Yeah.
Will you have a date with me?
Of course.
Or dates?
Let's have a date.
Are you ready to try?
I'm ready.
Wow.
Smells so good.
Cheers.
Wow, great.
What do you like about it?
I like the flavor from the dates, and the mushrooms, and the chicken is so tender.
I know, well, four parts, I cooked slow and low.
And alternatively, you guys can use an instant pot, just cook slowly, wow, will you have
a date with me?
Sure.
Again?
Date is so sweet, and the goji berry, it tastes a little bit like a cranberry, right?
