CROQUETTE DOUGH

300 ml Whole Milk
50 ml Heavy Cream
200 ml Fish Stock
50 g Butter
80 g All-Purpose Flour
30 ml Olive Oil
2 Cloves Purple Garlic
1 tbsp Chopped Parsley
1 tsp Salt, Pepper, and Nutmeg
1 Sheet Gelatin

2 Whole Eggs
150 g All-Purpose Flour
150 g Breadcrumbs

1 Egg Yolk
100 ml Shrimp Oil
1 tsp Salt
1 tsp Garlic chips
