This dessert is a true treat for those with a sweet tooth! The base consists of soft, milk-soaked cocoa biscuits, topped with rich caramel with roasted peanuts, a delicate mascarpone and whipped cream layer, and a white chocolate ganache with crunchy nuts. Perfect for a small holiday cake or as a teatime dessert.
Ingredients:
Cookie dough:
300 g tea biscuits.
15 g cocoa powder.
150 ml milk.
My baking tray is 18*28 cm.
Caramel peanut mix:
175g sugar.
50 ml water.
160ml warm whipped cream (33%).
70g butter.
150 g chopped, roasted peanuts.
For the cream:
250 g mascarpone cheese (any other cream cheese can be used).
35 g powdered sugar.
10 g vanilla sugar (1 packet).
8 g cream thickener (1 sachet).
Mix for 30 seconds.
250ml whipped cream (33%).
Chocolate ganache with white chocolate:
125g white chocolate.
75 ml cream (33%).
15 g chopped peanuts.
Garnish with whipped cream and caramel sauce.
