
What Really Happens To Sugarcane Before It Becomes Candy?

Sugarcane is harvested, washed and pressed to extract the juice. The juice is filtered to remove impurities, then condensed by heat into syrup. The syrup is cooked in a vacuum pan to crystallize into sugar crystals. The sugar is centrifuged to separate the molasses, dried and then ground or re-melted to make candy, cakes and other sweet products.
