One pot, 30 minutes each, two different pasta ideas. Let's go.
Hey y'all, welcome to Make It Dairy-Free. I am Larisha and today we are going to be showing
you two different one pot pasta dishes that are both ready in 30 minutes or less. Pastas are one
of the easiest dishes that you can make and with one pot pasta dishes it's even easier and with the
craziness of this year and the upcoming busyness of the holidays we can all use a few extra easy
dishes. Am I right? Both of these can be top eight allergen free so if you are serving someone
with allergies they are perfect for that. Which brings me to my two quick tips for this video.
First one is that if you need to swap this with gluten-free pasta just be mindful that it cooks
a little differently and make sure that you check out the tips in both of the posts if you are
making it with gluten-free pasta. And number two, one of the biggest mistakes that people make when
cooking one pot pasta dishes is that they use a skillet that is too large and doing that will
make your liquid reduce even faster and we don't want that. We want a creamy pasta so we recommend
a 12-inch skillet that has sides that come up on it and then you will be good to go for these pasta
dishes. So alright I've done enough talking let's get right into both of the recipes. First up is
our easy creamy garlic parmesan pasta. This one only needs nine ingredients to make and almost
everything is likely a kitchen staple for you. To a large skillet with sides you are going to add
your vegan butter over medium heat and melt that down. Once melted you are going to add in all of
your garlic. Yes we are adding an entire bulb, garlic lovers unite. Saute that for a few minutes
making sure to move often so it doesn't burn. Then you're going to add in your vegetable stock
followed by your coconut milk. If you're allergic you can use another dairy-free milk. We'd suggest
oat because it's creamier than the others. Add in some salt and pepper and give that a stir around.
Then you are going to add in your uncooked pasta. We are adding fettuccine but honestly any pasta
that cooks to al dente within eight to ten minutes will work. Pastas that take longer would need more
liquid added. Push the pasta down under the liquid so that it can start to soften. Moving it around
so that the noodles do not stick to each other bring to a boil. Once they soften up start twirling
the noodles around again so they don't stick to each other during the cooking process. Once boiling
reduce heat to a simmer then push them under the liquid as much as possible and continue to cook
for 20 minutes or until the noodles are cooked through. During this time make sure to move the
noodles and sauce around so it doesn't stick and all cooks properly. Once your noodles are done
cooking you are going to add in your vegan parmesan cheese into your pasta. We're using the
Violife parmesan block here but we also have a homemade version on our site that we will link
below. If using the homemade version you can just sprinkle on the top as it doesn't melt as well.
Then just add in some fresh chopped parsley or you could also do fresh basil.
And that's it plate it up and serve it. Just a quick tip you can totally add in any vegetables
like broccoli, asparagus, or peas here or you could do sautéed mushrooms, chickpeas, or vegan chicken,
seitan, or crispy tofu. Tons of options to add even more here to make this dish go further. Also if
you want to kick it up a bit with a spice feel free to add in some red pepper flakes. Get creative and
Now for our vegan cajun chicken pasta. We are going to start with some oil here in a skillet
over medium heat. For both recipes we give oil-free instructions in the written post.
Then we are going to mix up our spices which are smoked paprika, oregano, thyme, garlic, and onion
powder, cayenne, salt, and pepper. Then to our skillet we are adding some chopped frozen vegan
chicken strips. You could also do some seitan chicken, chickpeas, or mushrooms depending on
your preferences. Add in that spice mixture and give this a stir together. Now this dish is a bit
on the spicier side so if you need to tone it down you can omit or reduce the cayenne. Once stirred
you are going to add in your onions. Take your time here and really mix together the onions and
spices to the point where all your onions go from a white to an orange color just like snooki. Let
these sit for about two minutes without touching them. After that stir them around again and let
cook for another minute or two until the onions are softened. Then you're going to add in your
uncooked pasta. We are adding in penne but again you can do this with any pasta that cooks to
al dente within 8 to 10 minutes. Then some fire roasted tomatoes, coconut milk, again any other
dairy-free milk will work, and some vegetable stock. Once you have everything in your skillet
stir together very well and then add your lid and let it come to a boil before stirring again.
Once it comes to a boil open the lid and stir together again. You're going to stir every few
minutes putting the lid back on every time until the pasta is cooked which should be about 10 to 12
minutes. Quick tip if your pasta is cooked but you have excess liquid then remove the lid raise the
temperature and cook for another three to four minutes stirring often until the liquid has
evaporated. Once done add in some vegan cream cheese and stir together until melted. Top it
with some green onions and that's it you can serve it up. Both of these dishes heat up well if you
need to meal prep and are great with vegan garlic bread or garlic knots that we will link in the
description below. Alright y'all we hope you loved this video please give this video a like and
