Peaceful slow life mini vlog / 🍌 banana bread recipe / mom finished her bed throw 🍂 autumn already

Autumn has officially arrived, but we are still experiencing summer days for all practical reasons. Join me in a peaceful tapestry of moments here on the farm. Among other things, I’m sharing a favorite banana bread recipe, as well as my mom’s finished crocheted throw for her bed. As I am writing this I am listening to the rumbling of thunder … we had a very light shower a few minutes before.

🍌 Banana Bread Recipe:
2 eggs
240 g (500 ml) cake flour
60 g (75 ml) sugar (if you want it sweeter, add more sugar)
125 ml apple juice
2 ml bicarbonate soda
2 ml salt
15 ml baking powder
50 ml avocado oil (or your own choice of oil)
about 4 mashed (you can use a fork) medium bananas
1/2 cup of flaked almonds

🥣Method
In a mixing bowl: lightly whisk eggs through
add sugar and whisk till it is dissolved.
I then simply add the mashed bananas, oil, apple juice and flaked almonds.
Lightly mix it together.
Now add the rest of the dry ingredients (cake flour, salt, bicarbonate soda and baking powder) to the mix. I mix it in through a sieve.
I simply do the mixing by hand, but you are welcome to use a hand blender.
Pour the batter into a baking paper lined or greased loaf pan.
Bake at 180 degrees Celsius for 45 - 55 minutes. Keep an eye on it, mine is usually done at 45 minutes, but my oven has a fan. If you stick a knife or toothpick in at the center, it must come out clean.
