Bacon Breakfast Bowl

Welcome back to Mimi's Organic Eats! Today we're making bacon breakfast bowls. This easy breakfast
doesn't need eggs and it's packed with protein. Preheat your oven to 425 degrees. Start by peeling
and chopping one large sweet potato into one to two inch cubes. Add to a bowl and then add two
tablespoons of melted coconut oil and a half a teaspoon of cinnamon. Mix together to coat the
potatoes completely. Transfer to a parchment paper lined baking sheet and spread out the potatoes.
Bake for 25 to 30 minutes or until soft on poke with a fork. While the potatoes are baking,
cook eight ounces of pork bacon. I'm using Organic Valley bacon which is my absolute favorite.
I prefer to do this in my air fryer but if you want to do this in a skillet or in the oven you
can do that as well. I line the air fryer basket with foil and then spread out the bacon evenly.
I cook it on the bake setting at 400 for 10 to 15 minutes or until it's golden brown.
While the bacon is cooking you can warm your breakfast sausages. I'm using Applegate Organic
Chicken and Apple Sausages for this recipe but homemade also works too. Warm the sausages in a
small skillet. I like to add three sausages per bowl. Once the sweet potatoes come out of the
oven add salt and pepper to taste. Assemble the bowl by adding half the sweet potatoes,
three sausages, a couple pieces of bacon, and apple slices to a bowl. Sprinkle with pumpkin
seeds and it's ready to serve. I hope you enjoy this easy breakfast bowl as much as I do. If you
