How expensive are groceries these days? It’s crazy, right? Today, I'm bringing you three super cheap, easy, and delicious snacks your kids—and even big kids (meaning adults!)—will love. These recipes are perfect for any time of day and are sure to be a hit with the whole family. Savoury Toasts (Pizza Toasts): First up, we have Savoury Toasts, or as I like to call them, "Pizza Toasts"—a kid favourite!
Ingredients:
2 whole eggs
120g chopped bacon (about 5 rashers)
1 cup grated cheese
2 teaspoons Worcestershire sauce
A pinch of salt
¼ teaspoon cayenne pepper (optional)
Bread or Turkish rolls
Butter
Instructions:
1. Whisk the eggs in a bowl until well combined.
2. Add the chopped bacon, grated cheese, Worcestershire sauce, salt, and cayenne pepper (if using).
3. Mix everything thoroughly.
4. Butter the bread or rolls and spread the mixture evenly on top.
5. Place on a paper-lined baking tray and fill any gaps with extra cheese.
6. Bake in a preheated oven at 180°C/350°F for about 20 minutes, or until golden brown.
7. Cut in half and enjoy!
Pinwheels: Next, we have Pinwheels! Puff pastry is so versatile and easy to use.
Ingredients:
Puff pastry sheets
Tomato paste, pizza sauce, or pasta sauce
Shaved ham
Chopped onion
Grated cheese
Instructions:
1. Thaw the puff pastry sheets for about 5 minutes.
2. Spread your choice of sauce evenly over the pastry.
3. Top with shaved ham and chopped onion.
4. Roll up the pastry, removing the plastic backing and lightly flouring your workbench if needed.
5. Cut into 1-inch slices using a serrated knife.
6. Place on a paper-lined baking tray and sprinkle with grated cheese.
7. Bake in a preheated oven at 200°C/400°F for about 20 minutes, until puffed up and golden brown.
8. Remove and enjoy!
Pikelets: Finally, we have Pikelets! Super cheap, easy, and delicious warm or cold.
Ingredients:
1 whole egg
1 tablespoon sugar
1 cup self-raising flour (or 1 cup plain flour + 2 teaspoons baking powder)
¼ teaspoon bi-carb soda
200ml (¾ cup) milk
1 teaspoon vinegar
1 tablespoon melted butter
Instructions:
1. Whisk the egg and sugar in a bowl until well combined.
2. Sift in the flour (or flour mixture).
3. Mix the milk with vinegar and add to the flour mixture along with melted butter. Stir gently, leaving some lumps.
4. Heat a non-stick pan over moderately low heat and add a bit of butter.
5. Spoon the mixture into the pan without overcrowding. Cook for 2-3 minutes on each side, flipping when bubbles appear.
6. Serve with your favourite toppings like butter and jam. Store any leftovers in the fridge.
