Hi, welcome to Drinks Tube, I'm Carys from Liquorlyrics, we hand make ice lollies and
today I'm going to be making you a summer fruit sangria ice lolly. These are perfect for this
time of year, barbecue season and these are really going to impress your friends because they look
beautiful. I'm going to be using these moulds, super cheap, you can get them online,
really easy to get hold of. These are the summer fruits I'm going to be using, we've got red grapes,
white peaches, strawberries, oranges, mint, edible flowers and white wine. So let's start with the
grapes, try and chop them lengthways because they just look prettier that way and you're going to
drop say four halves in each one. Orange is next, you need to cut them quite small because you don't
want massive bits in people's mouths and it makes it look prettier. So it's about five pieces of
strawberries, five pieces in each mould, a white peach, so again about this small, five in each one.
Now we're going to chop our mint, so you want only one leaf per mould. We're going to chop this really
fine, so I do it lengthways and then I just make them into little squares, that's about enough.
Sprinkle into my moulds, next we're going to put in edible flowers. These are little pansies
and they look really pretty, they come in loads of different colours. You can just get these online,
so we're just going to put in two, three flowers in each one. Now we have all of our different
fruits, the mint and the edible flowers in our moulds, so then we move on to the wine, water and sugar.
So I'm using white wine today, this is a Riesling, use anything sweet, the sweeter the better.
White wine looks the best, but if you like red wine or rosé that's cool too. So we're going to use 100 ml
of white wine, let me look and see, perfect. Then we're going to get 100 ml of water, so it's really
easy to remember, it's half and half, you just need to dilute the wine down so it makes it freeze.
Okay, on to the sugar, you need about 60 grams when you've got 100 ml of wine and 100 ml of water.
Stir it, that's about good to me. Pour it in gently, then to make sure it's looking perfect
for your friends, you want to get the end of a teaspoon and you just want to stir around to make
sure you've got all the different fruits all throughout the lolly. So we're ready to put our
lolly tops on, I'm going to be using lolly sticks, you can get these online for like £1, like £100,
they're really cheap and you can make loads of ice lollies. But how to get them to stick in here
is another matter, very scientific, I made a piece of card with holes in it. So all you do,
put the card on, cut around the shape, stick some holes in, you don't want them to go all the way
down to the bottom, make sure the lolly sticks are centred and straight so they still look good.
Next we're going to put them in the freezer, ideally you want to put them in overnight so
they have time to freeze, if you're stuck for time, six hours minimum, so make them in the
morning, they should be ready by the evening. Okay, in they go. So the ice lollies have been
in the freezer for about six hours, so ready to take them out. What you want to do is get your
hot water bath ready before you take them out, and this is going to loosen them so you can pull
them out easily. So it's just hot water from the tap, you could use a washing up bowl or the sink.
Make sure the hot water goes through all the holes, so you're going to do that kind of motion.
Let's see, one, two, three. Okay, so that should be about right. Let's give it a wiggle.
This looks perfect. I love how you can see all the fruit, you can see the pansies. Let's have a taste.
That's really good. Okay, one more. This is so good. I actually have to stop trying it or else I
won't be able to speak. It's really yummy, you're really going to impress your friends guys, so make
sure you give it a go. Send me photos on Instagram, Twitter, at Drinks Tube. Also, if you love sangria,
Amelia has done a really cool recipe. Check it out and I'll see you soon. Cheers.
