Blueberry Lemon Muffins Recipe:
1 ½ cups all-purpose flour
¾ cup Truvia® Sweet Complete™ All-Purpose Sweetener
½ teaspoon kosher salt
2 teaspoons baking powder
6 tablespoons melted butter
1 egg
1/2 cup milk
1 tsp vanilla extract
Juice from half a lemon
Zest from the lemon
1 cup fresh or frozen blueberries
Next, add the salt and baking powder.
In the same pitcher that I have milk to get our muffins nice and soft, I’ll add melted butter, vanilla extract, and an egg. Now to get the lemon essence in there - zest of a whole lemon and juice from half of a lemon. Mix it all up and pour into the bowl.
For the blueberries, you could use either fresh or frozen, don’t thaw the blueberries if you’re using frozen - just toss it in a little bit of flour and mix it with the batter just until combined.
Raspberry Vanilla Scones
Yield: 6-8 Scones
2 cups all purpose flour
1/3 cup Truvia® Sweet Complete™ All-Purpose Sweetener
1/2 teaspoon salt
3 teaspoons baking powder
1/2 cup unsalted butter, grated
3/4 cup half and half
1 egg
1 teaspoons vanilla extract
1 cup frozen raspberries
Cream Cheese Danish
Yield: 8-9 Danishes
1 sheet puff pastry
8 oz cream cheese, at room temperature
1 egg
¼ cup Truvia® Sweet Complete™ All-Purpose Sweetener
1 tsp lemon juice
½ tsp vanilla extract
filling (optional): Jam, fresh berries, chocolate chips
